🍽️ Crispy Bacon Scrambled Eggs with Wild Garlic

Ingredients
- 1 bunch wild garlic
- 40 g lean streaky bacon (diced)
- 8 eggs
- 8 tbsp whipping cream
- salt
- pepper (from the mill)
- 2 tbsp butter
Instructions
- 1. Thoroughly wash the wild garlic under running water.
- 2. Shake off excess water to dry the greens.
- 3. Cut the wild garlic leaves into fine strips.
- 4. Heat a non-stick frying pan over medium heat.
- 5. Add the bacon to the pan and fry until crispy.
- 6. Whisk the eggs in a separate bowl.
- 7. Stir the cream into the eggs.
- 8. Season the egg mixture with salt and pepper to taste.
- 9. Add a knob of butter to the pan with the bacon.
- 10. Let the butter melt in the pan.
- 11. Pour the egg mixture into the hot pan.
- 12. Reduce the heat to low to medium.
- 13. Stir the eggs slowly until they begin to set.
- 14. Push the egg mixture together with a spatula to form loose curds.
- 15. Remove the pan from the heat once the eggs are creamy.
- 16. Plate the scrambled eggs.
- 17. Sprinkle the chopped wild garlic leaves over the scrambled eggs.
- 18. Serve the dish immediately with whole grain nut bread.
