🍽️ Bacon Cheese Cookies

Ingredients
- 1 small onion
- 1 tsp butter
- 25 g bacon cubes
- 25 g grated Pecorino
- 30 g coarse oat flakes
- 4 tbsp butter
- 1 egg
- 1 tsp honey
- 25 g fine oat flakes
- 70 g flour
Instructions
- 1. Peel the onion, dice it finely, and sauté it in hot butter until translucent. Add the bacon and fry briefly. Let it cool slightly and mix with the cheese and coarse oat flakes.
- 2. In a bowl, beat the butter and egg until frothy. Stir in the honey. Then add the oat flakes and flour and mix everything well. Finally, fold in the oat mixture.
- 3. Line a baking sheet with parchment paper. Use a teaspoon to scoop small portions of the dough onto the sheet. Bake the cookies in a preheated oven (180°C, middle rack) for about 12 minutes until golden brown.
