🍰 Crispy Bacon Cheesecake

Ingredients
- 150 g flour
- 80 g butter
- 1 tsp salt
- 1 egg

- 200 g smoked bacon
- 1 onion
- 4 eggs
- 150 ml milk
- 250 ml whipping cream
- 150 g crème fraîche
- salt
- pepper (from the mill)
- nutmeg (freshly grated)
- 100 g grated Gruyère cheese
Instructions
- 1. Pour the flour onto a clean work surface.
- 2. Press a well into the center of the flour.
- 3. Cut the cold butter into small cubes.
- 4. Distribute the butter pieces evenly around the flour well.
- 5. Sprinkle the salt over the butter.
- 6. Crack the egg directly into the well.
- 7. Chop all ingredients roughly into crumbs using a dough scraper.
- 8. Knead the crumbs together into a dough using your hands.
- 9. Knead the dough only until it becomes pliable.
- 10. Grease a quiche or springform pan with butter.
- 11. Dust the greased pan with flour.
- 12. Roll out the dough on a lightly floured surface.
- 13. Flour the rolling pin as well to prevent sticking.
- 14. Roll the dough slightly larger than the pan.
- 15. Carefully roll the dough circle off the rolling pin.
- 16. Place the dough into the prepared pan.
- 17. Press the dough firmly onto the bottom.
- 18. Shape a nice edge using your fingers.
- 19. Trim excess dough edges with a knife.
- 20. Place the pan with the dough in the refrigerator.
- 21. Preheat the oven to 180 degrees Celsius fan mode.
- 22. Slice the bacon into thin strips.
- 23. Cut the bacon strips into small cubes.
- 24. Peel the onion.
- 25. Finely chop the onion.
- 26. Crack the eggs into a bowl.
- 27. Whisk the eggs vigorously with a whisk.
- 28. Pour the milk into the eggs.
- 29. Pour the cream into the mixture.
- 30. Add the crème fraîche.
- 31. Mix all liquids thoroughly.
- 32. Season the mixture with salt.
- 33. Season the mixture with pepper.
- 34. Grate some nutmeg into the mixture.
- 35. Mix the cheese with the onions.
- 36. Fold in the bacon cubes.
- 37. Spread the bacon-cheese mixture evenly over the dough.
- 38. Pour the egg-cream mixture on top.
- 39. Place the pan in the center of the oven.
- 40. Bake the quiche for about 45 minutes.
- 41. Make sure it turns golden brown.
- 42. Cover the quiche with aluminum foil if it browns too much.
- 43. Remove the quiche from the oven.
- 44. Let it rest briefly.
- 45. Cut the quiche into pieces.
- 46. Serve it hot or warm.
