  2. 2. Peel the asparagus completely.
  3. 3. Cut off the tough ends of the asparagus stalks.
  4. 4. Cut off the tender asparagus tips.
  5. 5. Place the asparagus tips in a bowl.
  6. 6. Cover the bowl with the tips.
  7. 7. Set the bowl aside.
  8. 8. Cut the remaining asparagus stalks into small pieces.
  9. 9. Peel the potato.
  10. 10. Grate the peeled potato finely.
  11. 11. Let the peas thaw.
  12. 12. Place the asparagus peels and cut ends into a pot.
  13. 13. Pour 1 liter of water into the pot.
  14. 14. Add some salt to the pot.
  15. 15. Add some sugar to the pot.
  16. 16. Add 1 tablespoon of butter to the pot.
  17. 17. Bring the mixture in the pot to a boil.
  18. 18. Cover the pot.
  19. 19. Let the mixture cook for about 15 minutes.
  20. 20. Remove the pot from the heat.
  21. 21. Strain the liquid (cooking broth).
  22. 22. Add the small asparagus pieces to the strained liquid.
  23. 23. Add the grated potato pieces to the liquid.
  24. 24. Let the asparagus and potato pieces cook in the liquid for about 20 minutes.
  25. 25. Puree the asparagus pieces together with the liquid until smooth.
  26. 26. Press the puree through a sieve if desired.
  27. 27. Wash the salmon fillet.
  28. 28. Pat the salmon fillet dry.
  29. 29. Cut the salmon fillet into cubes.
  30. 30. Drizzle the salmon cubes with lemon juice.
  31. 31. Melt the remaining butter in a pot.
  32. 32. Sprinkle the flour into the melted butter.
  33. 33. Sauté the flour until light.
  34. 34. Stir the asparagus puree into the flour mixture.
  35. 35. Bring the soup to a boil.
  36. 36. Let the soup simmer for a few minutes.
  37. 37. Add the thawed peas to the soup.
  38. 38. Add the reserved asparagus tips to the soup.
  39. 39. Add the salmon cubes to the soup.
  40. 40. Bring the soup to a boil again.
  41. 41. Let the soup simmer gently for another 2 to 3 minutes.
  42. 42. Stir Creme Fraîche into the soup.
  43. 43. Season the soup with salt.
  44. 44. Season the soup with pepper.
  45. 45. Serve the soup immediately.
