🍽️ Creamy Asparagus Pea Soup with Diced Salmon

Ingredients
- 600 g white asparagus
- 1 potato
- salt
- sugar
- 2 tbsp butter
- 100 g peas (frozen)
- 250 g salmon fillet (skinless)
- 1 tbsp lemon juice
- 1 tbsp flour
- 150 g crème fraîche
- pepper (from the mill)
Instructions
- 1. Thoroughly wash the asparagus.
- 2. Peel the asparagus completely.
- 3. Cut off the tough ends of the asparagus stalks.
- 4. Cut off the tender asparagus tips.
- 5. Place the asparagus tips in a bowl.
- 6. Cover the bowl with the tips.
- 7. Set the bowl aside.
- 8. Cut the remaining asparagus stalks into small pieces.
- 9. Peel the potato.
- 10. Grate the peeled potato finely.
- 11. Let the peas thaw.
- 12. Place the asparagus peels and cut ends into a pot.
- 13. Pour 1 liter of water into the pot.
- 14. Add some salt to the pot.
- 15. Add some sugar to the pot.
- 16. Add 1 tablespoon of butter to the pot.
- 17. Bring the mixture in the pot to a boil.
- 18. Cover the pot.
- 19. Let the mixture cook for about 15 minutes.
- 20. Remove the pot from the heat.
- 21. Strain the liquid (cooking broth).
- 22. Add the small asparagus pieces to the strained liquid.
- 23. Add the grated potato pieces to the liquid.
- 24. Let the asparagus and potato pieces cook in the liquid for about 20 minutes.
- 25. Puree the asparagus pieces together with the liquid until smooth.
- 26. Press the puree through a sieve if desired.
- 27. Wash the salmon fillet.
- 28. Pat the salmon fillet dry.
- 29. Cut the salmon fillet into cubes.
- 30. Drizzle the salmon cubes with lemon juice.
- 31. Melt the remaining butter in a pot.
- 32. Sprinkle the flour into the melted butter.
- 33. Sauté the flour until light.
- 34. Stir the asparagus puree into the flour mixture.
- 35. Bring the soup to a boil.
- 36. Let the soup simmer for a few minutes.
- 37. Add the thawed peas to the soup.
- 38. Add the reserved asparagus tips to the soup.
- 39. Add the salmon cubes to the soup.
- 40. Bring the soup to a boil again.
- 41. Let the soup simmer gently for another 2 to 3 minutes.
- 42. Stir Creme Fraîche into the soup.
- 43. Season the soup with salt.
- 44. Season the soup with pepper.
- 45. Serve the soup immediately.
