Ingredients
- 500 g asparagus (green)
- 1 lime (unwaxed, zest and juice)
- 200 ml milk
- 200 ml whipping cream
- 2 tsp vegetable broth
- salt
- pepper
- 1 pinch sugar
Instructions
- 1. Thoroughly wash the asparagus.
- 2. Remove the woody lower ends of the stalks.
- 3. Slice the asparagus into thin rounds.
- 4. Place the asparagus slices into a pot.
- 5. Pour 300 milliliters of water over the asparagus.
- 6. Add the broth.
- 7. Add the lemon juice.
- 8. Cook the asparagus until soft for about 10 minutes.
- 9. Puree the soup until very smooth.
- 10. Pour the cream into the soup.
- 11. Season the soup with salt.
- 12. Season the soup with pepper.
- 13. Season the soup with sugar.
- 14. Pour the milk into a small saucepan.
- 15. Heat the milk.
- 16. Whip the hot milk vigorously with a mini whisk.
- 17. Fill the soup into large jars.
- 18. Ensure the jars are pre-warmed.
- 19. Top the soup with the milk foam.
- 20. Grate lime zest over the soup.
- 21. Serve the asparagus soup in the jar.
