🍽️ Fresh Asparagus and Ham Salad

Ingredients
- 400 g green asparagus
- salt
- 4 medium tomatoes
- 4 handfuls arugula (approx. 100 g)
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1 tbsp fruit vinegar
- 1 tsp honey
- pepper (from the mill)
- 12 slices Parma ham
- Parmesan shavings (for garnish)
Instructions
- 1. Wash the asparagus thoroughly.
- 2. Peel the bottom third of the stalks.
- 3. Cut off the tough ends.
- 4. Cut the asparagus into pieces about 5 centimeters long.
- 5. Bring salted water to a boil.
- 6. Cook the asparagus for about 8 minutes.
- 7. Dip the tomatoes briefly into the boiling water.
- 8. Shock the tomatoes immediately in cold water.
- 9. Peel the skin off the tomatoes.
- 10. Drain the asparagus.
- 11. Shock the asparagus in cold water.
- 12. Remove the stem area from the tomatoes.
- 13. Quarter the tomatoes.
- 14. Wash the arugula.
- 15. Spin the arugula dry.
- 16. Cut the arugula into thin strips.
- 17. Arrange the salad on plates.
- 18. Use the asparagus, tomatoes, and arugula for the arrangement.
- 19. Whisk 2 tablespoons of oil with lemon juice.
- 20. Add vinegar and honey.
- 21. Season the vinaigrette with salt and pepper.
- 22. Drizzle the vinaigrette over the salad.
- 23. Heat the remaining oil in the pan.
- 24. Fry the Parma ham briefly.
- 25. Place Parmesan shavings on the salad.
- 26. Add the fried ham to the salad.
- 27. Serve the asparagus salad with ham.
