🍽️ Asparagus Pizzas with Fresh Asparagus Salad

Ingredients
- 500 g spelt whole wheat flour
- salt
- 42 g yeast (1 cube)
- 10 g honey (1 tsp)
- 6 tbsp olive oil
- 400 g potatoes (4 potatoes)
- 500 g green asparagus
- 80 g arugula (1 bunch)
- 250 g oyster mushrooms
- 250 g cherry tomatoes
- 3 tbsp white balsamic vinegar
- 20 g capers (2 tbsp)

- 120 g sour cream (10 % fat; 12 tsp)
Instructions
- 1. Put the flour and 2 teaspoons of salt into a large bowl.
- 2. Make a well in the center of the flour mixture.
- 3. Crumble the yeast into the well.
- 4. Add the honey to the yeast.
- 5. Stir the yeast and honey with 120 milliliters of lukewarm water.
- 6. Let the mixture rise, covered, in a warm place for 20 minutes.
- 7. Add 2 tablespoons of oil and about 100 milliliters of lukewarm water to the pre-dough.
- 8. Knead everything into a smooth dough.
- 9. Let the dough rise, covered, for another 60 minutes.
- 10. Peel the potatoes.
- 11. Grate the potatoes into very thin slices.
- 12. Wash the asparagus.
- 13. Peel the bottom third of the asparagus.
- 14. Cut off the tough ends of the asparagus.
- 15. Put the asparagus into boiling salted water.
- 16. Cook the asparagus for 8 minutes.
- 17. Let the asparagus drain.
- 18. Wash the arugula.
- 19. Spin the arugula dry.
- 20. Clean the mushrooms.
- 21. Wash the tomatoes.
- 22. Halve the tomatoes.
- 23. Arrange the arugula, mushrooms, tomatoes, and asparagus on a platter.
- 24. Mix the remaining oil, balsamic vinegar, 3 tablespoons of water, capers, salt, and pepper for the vinaigrette.
- 25. Drizzle the salad with the vinaigrette.
- 26. Knead the pizza dough once more.
- 27. Divide the dough into 12 equal pieces.
- 28. Shape the dough pieces into small round flatbreads.
- 29. Brush each flatbread with 1 teaspoon of sour cream.
- 30. Top each flatbread with the potato slices.
- 31. Salt and pepper the pizzas.
- 32. Place the pizzas on a baking sheet lined with baking paper.
- 33. Preheat the oven to 250 degrees Celsius (convection 220 degrees Celsius; gas: highest setting).
- 34. Bake the pizzas for 10 to 12 minutes.
- 35. Serve the pizzas with the salad.
