🍽️ Asparagus Tartare on Crispy Toast

Ingredients
- 6 stalks green asparagus
- 1 shallot
- 150 g salmon fillet
- 0.5 tsp wasabi paste
- 1 tbsp white balsamic vinegar
- 2 tbsp grape seed oil
- 1 dash lemon juice
- salt
- pepper
- 4 slices toast bread
- dill tips (for garnishing)
Instructions
- 1. Fill a pot with water and add salt.
- 2. Peel the lower part of the asparagus stalks.
- 3. Cook the asparagus in the salted water for about 10 minutes until it is still slightly firm.
- 4. Immediately shock the asparagus with cold water to stop the cooking process.
- 5. Let the asparagus drain well.
- 6. Finely chop the asparagus.
- 7. Peel the shallot.
- 8. Dice the shallot very finely.
- 9. Rinse the salmon briefly.
- 10. Pat the salmon dry with a kitchen towel.
- 11. Dice the salmon into small pieces.
- 12. Place the salmon, shallot, and asparagus into a bowl.
- 13. Mix the ingredients with wasabi, vinegar, and oil.
- 14. Season the mixture to taste with lemon juice, salt, and pepper.
- 15. Toast the slices until golden brown.
- 16. Place the toast slices on a plate.
- 17. Use a baking ring to shape the asparagus tartare on the toast.
- 18. Garnish the dish with fresh dill.
- 19. Serve the toast immediately.
