  1. 1. Peel the asparagus and cut it into pieces about 3 centimeters long.
  2. 2. Set aside the tender asparagus tips separately.
  3. 3. Peel the onion and cut it into small cubes.
  4. 4. Heat butter in a large pot over medium heat.
  5. 5. Sauté the onion cubes until they become translucent.
  6. 6. Add the cut asparagus pieces and sauté them briefly.
  7. 7. Deglaze the mixture with the poultry broth.
  8. 8. Let the soup simmer for about 20 minutes.
  9. 9. Then puree the soup finely with a blender.
  10. 10. Press the mixture through a fine sieve back into the pot.
  11. 11. Stir half of the cream into the soup.
  12. 12. Now bring the soup to a boil.
  13. 13. Season the soup to taste with salt, pepper, and lemon juice.
  14. 14. Add the ham strips and the reserved asparagus tips to the soup.
  15. 15. Let the ingredients steep in the hot soup for 5 minutes.
  16. 16. Wash the chives and shake them dry.
  17. 17. Cut the chives into fine rings.
  18. 18. Whip the remaining cream until stiff.
  19. 19. Gently fold the whipped cream into the soup just before serving.
  20. 20. Distribute the soup onto the plates.
  21. 21. Garnish the plates with the chive rings.
