  1. 1. Peel the asparagus and cut it into pieces about 3 centimeters long.
  2. 2. Set aside the tender asparagus tips separately.
  3. 3. Peel the onion and dice it into small cubes.
  4. 4. Heat butter in a large pot over medium heat.
  5. 5. Sauté the onion cubes until they become translucent.
  6. 6. Add the cut asparagus pieces to the onion mixture.
  7. 7. Fry the asparagus pieces briefly together.
  8. 8. Deglaze the vegetables with the poultry broth.
  9. 9. Let the soup simmer for about 20 minutes.
  10. 10. Puree the entire soup finely in a blender.
  11. 11. Strain the soup through a fine sieve back into the pot.
  12. 12. Add half of the cream to the soup.
  13. 13. Bring the soup to a boil.
  14. 14. Season the soup with salt, pepper, and lemon juice.
  15. 15. Let the ham strips and asparagus tips steep in the hot soup for 5 minutes.
  16. 16. Wash the chives and shake them dry.
  17. 17. Cut the chives into fine rings.
  18. 18. Whip the remaining cream until stiff.
  19. 19. Gently fold the whipped cream into the finished soup.
  20. 20. Distribute the soup onto the plates.
  21. 21. Garnish the plates with the chive rings.
