🍽️ Creamy Asparagus Soup with Ham

Ingredients
- 750 g asparagus
- 1 onion
- 2 tbsp butter
- 750 ml poultry broth
- 1 cup whipping cream (min. 30% fat content)
- salt
- pepper (from the mill)
- lemon juice
- 250 g cooked ham (in strips)
- 0.5 bunch chives
Instructions
- 1. Peel the asparagus and cut it into pieces about 3 centimeters long.
- 2. Set aside the tender asparagus tips separately.
- 3. Peel the onion and dice it into small cubes.
- 4. Heat butter in a large pot over medium heat.
- 5. Sauté the onion cubes until translucent.
- 6. Add the cut asparagus pieces to the pot and sauté them briefly.
- 7. Deglaze the vegetables with the poultry broth.
- 8. Let the soup simmer for about 20 minutes.
- 9. Puree the entire mixture finely in a blender.
- 10. Press the puree through a fine sieve back into the pot.
- 11. Stir half of the cream into the soup.
- 12. Bring the soup to a boil.
- 13. Season the soup to taste with salt, pepper, and lemon juice.
- 14. Add the ham strips and the reserved asparagus tips to the soup.
- 15. Let the ingredients steep in the hot soup for 5 minutes.
- 16. Wash the chives and shake them dry.
- 17. Cut the chives into fine rings.
- 18. Whip the remaining cream until stiff.
- 19. Gently fold the whipped cream into the soup just before serving.
- 20. Distribute the soup onto the plates.
- 21. Garnish the plates with the chive rings.
