  1. 1. Peel the asparagus and cut it into pieces about 3 centimeters long.
  2. 2. Set the tender asparagus tips aside separately.
  3. 3. Peel the onion and dice it into small cubes.
  4. 4. Heat butter in a large pot over medium heat.
  5. 5. Sauté the onion cubes in it until translucent.
  6. 6. Add the cut asparagus pieces to the onion mixture.
  7. 7. Sauté the asparagus pieces briefly.
  8. 8. Deglaze the vegetables with the poultry broth.
  9. 9. Let the soup simmer for about 20 minutes.
  10. 10. Puree the entire soup finely in a blender.
  11. 11. Pass the mixture through a fine sieve back into the pot.
  12. 12. Stir half of the cream into the soup.
  13. 13. Bring the soup to a boil.
  14. 14. Season the soup to taste with salt, pepper, and lemon juice.
  15. 15. Add the ham strips and the reserved asparagus tips to the soup.
  16. 16. Let the ingredients steep in the hot soup for about 5 minutes.
  17. 17. Wash the chives and shake them dry.
  18. 18. Cut the chives into fine rings.
  19. 19. Whip the remaining cream until stiff.
  20. 20. Gently fold the whipped cream into the soup just before serving.
  21. 21. Distribute the soup onto the plates.
  22. 22. Garnish the plates with the chive rings.
