🍝 Whole Wheat Spaghetti with Asparagus, Lemon, and Feta

Ingredients
- 200 g whole wheat spaghetti
- salt
- 3 tbsp lemon juice
- 1 tsp lemon zest
- 3 tsp olive oil
- 100 g feta (+ some to taste)
- pepper
- 150 g green asparagus
- 2 garlic cloves
Instructions
- 1. Bring a large pot of water to a boil and add some salt.
- 2. Cook the whole wheat spaghetti in it according to the package instructions until al dente.
- 3. Drain the pasta and set it aside.
- 4. Wash the asparagus thoroughly and pat it dry.
- 5. Cut off the woody lower ends of the asparagus.
- 6. Cut the asparagus into pieces about two centimeters long.
- 7. Peel the garlic and chop it finely.
- 8. Add two teaspoons of oil, the lemon juice, and the lemon zest to a bowl.
- 9. Stir the ingredients in the bowl well.
- 10. Crumble the feta cheese into small pieces using your hands.
- 11. Add the feta to the lemon-oil mixture and stir everything vigorously.
- 12. Season the cheese mixture with some pepper.
- 13. Heat the remaining oil in a large pan over medium heat.
- 14. Add the chopped garlic to the pan and roast it for one to two minutes.
- 15. Add the asparagus pieces to the pan and sauté them for two to three minutes.
- 16. Add the drained spaghetti and the feta-lemon mixture to the pan.
- 17. Heat everything over low heat for two to three minutes.
- 18. Season the pasta with salt and pepper to taste.
- 19. Portion the pasta onto two plates.
- 20. Add more lemon juice, salt, and pepper to taste if desired.
- 21. Optionally crumble some additional feta over the finished pasta.
