Ingredients
- 250 g green asparagus
- salt
- 5 shallots
- 8 eggs
- pepper
- 15 g butter (1 tbsp)
- 30 g grated mozzarella
Instructions
- 1. Wash the asparagus thoroughly.
- 2. Peel the bottom third of the asparagus stalks.
- 3. Cut off the woody ends.
- 4. Cut the asparagus stalks into bite-sized pieces.
- 5. Bring salted water to a boil.
- 6. Cook the asparagus for about 5 minutes.
- 7. Drain the asparagus.
- 8. Rinse the asparagus with cold water to stop the cooking process.
- 9. Let the asparagus drain.
- 10. Peel the shallots.
- 11. Cut the shallots into thin wedges.
- 12. Whisk the eggs in a bowl.
- 13. Season the eggs with salt and pepper.
- 14. Heat butter in a large, non-stick pan.
- 15. Sauté the shallots until translucent over medium heat.
- 16. Spread the shallots evenly in the pan.
- 17. Pour the egg mixture over the shallots.
- 18. Distribute the asparagus in the pan.
- 19. Sprinkle everything with cheese.
- 20. Let the tortilla set covered over medium heat for about 5 minutes.
- 21. Enjoy the tortilla immediately.
