🍽️ Asparagus – smarter

Ingredients
- 1 kg white asparagus
- salt
- 1 dash lemon juice
- 15 g butter (1 tbsp)
- 400 ml light Hollandaise sauce (see Smarter Tip)
Instructions
- 1. Rinse the asparagus under cold water.
- 2. Peel the stalks thinly with a vegetable peeler.
- 3. Cut off the lower woody ends.
- 4. Peel again if any fibers remain on the skin.
- 5. Tie the asparagus into four bundles with kitchen twine.
- 6. Wrap the bundles in damp cloths.
- 7. Store the asparagus in a cool place until you need it.
- 8. Bring plenty of water with salt to a boil.
- 9. Add a splash of lemon juice to the water.
- 10. Add a piece of butter to the cooking water.
- 11. Place the asparagus bundles into the boiling water.
- 12. Cook the asparagus over medium heat for 13 to 15 minutes.
- 13. Remove the cooked asparagus from the water.
- 14. Serve the asparagus on a platter.
- 15. Drizzle the asparagus with Hollandaise sauce.
