  1. 1. Rinse the asparagus under cold water.
  2. 2. Peel the stalks thinly with a vegetable peeler.
  3. 3. Cut off the lower woody ends.
  4. 4. Peel again if any fibers remain on the skin.
  5. 5. Tie the asparagus into four bundles with kitchen twine.
  6. 6. Wrap the bundles in damp cloths.
  7. 7. Store the asparagus in a cool place until you need it.
  8. 8. Bring plenty of water with salt to a boil.
  9. 9. Add a splash of lemon juice to the water.
  10. 10. Add a piece of butter to the cooking water.
  11. 11. Place the asparagus bundles into the boiling water.
  12. 12. Cook the asparagus over medium heat for 13 to 15 minutes.
  13. 13. Remove the cooked asparagus from the water.
  14. 14. Serve the asparagus on a platter.
  15. 15. Drizzle the asparagus with Hollandaise sauce.
