  1. 1. Wash the potatoes thoroughly and dry them.
  2. 2. Bring a large pot of salted water to a boil.
  3. 3. Cook the potatoes in it for about 25 minutes until tender.
  4. 4. Peel the white asparagus completely.
  5. 5. Cut off the woody ends of the white asparagus.
  6. 6. Peel only the bottom third of the green asparagus.
  7. 7. Remove the woody ends from the green asparagus if necessary.
  8. 8. Bring another large pot of water, one teaspoon of salt, and sugar to a boil.
  9. 9. Cook the white asparagus for about 15 minutes over low heat.
  10. 10. Add the green asparagus after 10 minutes.
  11. 11. Cook both types together until tender.
  12. 12. Test the doneness by piercing a stalk with a fork.
  13. 13. The stalk should bend over the back of the fork.
  14. 14. Skim the foam off the melted butter.
  15. 15. Place egg yolks and alcohol-free wine in a metal bowl.
  16. 16. Place the bowl over a hot, but not boiling, water bath.
  17. 17. Whisk the mixture with a whisk.
  18. 18. Continue stirring until a creamy mass forms.
  19. 19. Remove the bowl from the water bath.
  20. 20. Stir in the butter drop by drop at first.
  21. 21. Continue to stir in the butter in a thin stream.
  22. 22. Stir constantly so the sauce becomes creamy and does not curdle.
  23. 23. Season the sauce with lemon juice, salt, and pepper.
  24. 24. Lift the asparagus out of the water with a slotted spoon.
  25. 25. Let the asparagus drain well.
  26. 26. Wrap each asparagus stalk in a slice of ham.
  27. 27. Drizzle some Hollandaise sauce over the asparagus.
  28. 28. Serve the rest of the sauce separately.
  29. 29. Plate the asparagus with ham and sauce.
  30. 30. Serve the potatoes alongside.
  31. 31. Sprinkle the dish with fresh parsley.
  32. 32. Garnish with halved lemon slices.
