🍽️ Asparagus in Ham with Hollandaise and Potatoes

Ingredients
- 1 kg new potatoes
- salt
- 1 kg white asparagus
- 1 kg green asparagus
- 1 tsp cane sugar
- 400 g raw ham (in thin slices)
- 1 tbsp freshly chopped parsley
- 4 lemon slices
- 200 g butter
- 2 egg yolks
- 4 tbsp dry white wine (alcohol-free)
- 1 tsp lemon juice
- salt
- white pepper
Instructions
- 1. Wash the potatoes thoroughly and dry them.
- 2. Bring a large pot of salted water to a boil.
- 3. Cook the potatoes in it for about 25 minutes until tender.
- 4. Peel the white asparagus completely.
- 5. Cut off the woody ends of the white asparagus.
- 6. Peel only the bottom third of the green asparagus.
- 7. Remove the woody ends from the green asparagus if necessary.
- 8. Bring another large pot of water, one teaspoon of salt, and sugar to a boil.
- 9. Cook the white asparagus for about 15 minutes over low heat.
- 10. Add the green asparagus after 10 minutes.
- 11. Cook both types together until tender.
- 12. Test the doneness by piercing a stalk with a fork.
- 13. The stalk should bend over the back of the fork.
- 14. Skim the foam off the melted butter.
- 15. Place egg yolks and alcohol-free wine in a metal bowl.
- 16. Place the bowl over a hot, but not boiling, water bath.
- 17. Whisk the mixture with a whisk.
- 18. Continue stirring until a creamy mass forms.
- 19. Remove the bowl from the water bath.
- 20. Stir in the butter drop by drop at first.
- 21. Continue to stir in the butter in a thin stream.
- 22. Stir constantly so the sauce becomes creamy and does not curdle.
- 23. Season the sauce with lemon juice, salt, and pepper.
- 24. Lift the asparagus out of the water with a slotted spoon.
- 25. Let the asparagus drain well.
- 26. Wrap each asparagus stalk in a slice of ham.
- 27. Drizzle some Hollandaise sauce over the asparagus.
- 28. Serve the rest of the sauce separately.
- 29. Plate the asparagus with ham and sauce.
- 30. Serve the potatoes alongside.
- 31. Sprinkle the dish with fresh parsley.
- 32. Garnish with halved lemon slices.
