🍽️ Asparagus with Ham and Yogurt Dip

Ingredients
- 800 g green asparagus
- 1 tbsp butter
- salt
- 250 g raw ham (Katenschinken, in thicker slices)
- 100 g yogurt
- 75 g quark
- 4 tbsp whipping cream
- 1 tbsp lemon juice
- pepper (from the mill)
Instructions
- 1. Peel the asparagus only at the bottom third if necessary, and cut off the tough ends. Cook it in salted water with the butter for about 8 to 10 minutes. Remove it and let it drain.
- 2. Mix the yogurt with the quark, the cream, and the lemon juice. Season the mixture with salt and pepper.
- 3. Arrange the asparagus with the ham on plates and serve the sauce alongside. Parsley potatoes go perfectly with this.
