🍽️ Green Asparagus with Crispy Ham-Wrapped Potatoes

Ingredients
- 1.5 kg white asparagus
- salt
- 1 pinch sugar
- 100 g butter
- 2 tbsp chopped herbs (e.g. parsley, basil, tarragon)
- pepper (from the mill)
- 750 g small potatoes
- salt
- 100 g ham bacon (in thin slices)
- 2 tbsp oil
- wooden skewers
Instructions
- 1. Peel the asparagus and trim off the woody ends. Cook it in salted water with a pinch of sugar for 12 to 15 minutes.
- 2. Melt the butter in a small pot. Stir in the herbs and season the butter with salt and pepper.
- 3. Scrub the potatoes thoroughly and boil them with the skin on in salted water for about 20 minutes. Drain them, peel them, and wrap each potato with a strip of bacon. Insert wooden skewers through the potatoes to secure the bacon.
- 4. Heat the oil in a pan and fry the potatoes in it until crispy on all sides. Serve them together with the asparagus and the herb butter.
