  1. 1. Peel the asparagus thoroughly and cut off the woody ends. Bring plenty of water with salt, butter, and sugar to a boil and cook the asparagus for about 18 minutes.
  2. 2. Lift the asparagus out of the water with a slotted spoon and let it drain.
  3. 3. Melt butter in a pan and skim off the foam. Wash the sage leaves, pat them dry, and fry them in 1 tbsp of butter. Pour in the remaining butter, cut the ham into thin strips, fold them into the sage butter, and season with pepper.
