  1. 1. Place the morels in a bowl and cover them with lukewarm water.
  2. 2. Let the morels soak for one hour.
  3. 3. Pour the soaking water through a filter bag to clarify it.
  4. 4. Set aside the filtered mushroom water for later use.
  5. 5. Rinse the morels again under running water.
  6. 6. Thoroughly dry the morels with a kitchen towel.
  7. 7. Wash the asparagus tips thoroughly.
  8. 8. Peel the asparagus tips.
  9. 9. Bring water to a boil and add butter and sugar.
  10. 10. Cook the asparagus tips in this water for 12 minutes.
  11. 11. Drain the asparagus and let it drain well.
  12. 12. Heat the cream in a pot.
  13. 13. Let the cream simmer slightly.
  14. 14. Add 3 tablespoons of the mushroom water to the cream.
  15. 15. Season the sauce with salt and pepper.
  16. 16. Add the morels and asparagus tips to the sauce.
  17. 17. Heat everything together until it is warm.
  18. 18. Distribute the asparagus ragout onto the plates.
  19. 19. Garnish the dish with fresh chives.
