Ingredients
- 1 kg white asparagus tips
- 20 g dried morels
- 200 g whipping cream
- salt
- pepper (from the mill)
- 1 tbsp butter
- 1 pinch sugar
- chives (for garnishing)
Instructions
- 1. Place the morels in a bowl and cover them with lukewarm water.
- 2. Let the morels soak for one hour.
- 3. Pour the soaking water through a filter bag to clarify it.
- 4. Set aside the filtered mushroom water for later use.
- 5. Rinse the morels again under running water.
- 6. Thoroughly dry the morels with a kitchen towel.
- 7. Wash the asparagus tips thoroughly.
- 8. Peel the asparagus tips.
- 9. Bring water to a boil and add butter and sugar.
- 10. Cook the asparagus tips in this water for 12 minutes.
- 11. Drain the asparagus and let it drain well.
- 12. Heat the cream in a pot.
- 13. Let the cream simmer slightly.
- 14. Add 3 tablespoons of the mushroom water to the cream.
- 15. Season the sauce with salt and pepper.
- 16. Add the morels and asparagus tips to the sauce.
- 17. Heat everything together until it is warm.
- 18. Distribute the asparagus ragout onto the plates.
- 19. Garnish the dish with fresh chives.
