  1. 1. Rinse the salmon under cold water.
  2. 2. Pat the fish completely dry with a kitchen towel.
  3. 3. Cut the salmon into cubes of approx. 4 centimeters.
  4. 4. Season the fish cubes with salt and pepper.
  5. 5. Add a few drops of lemon juice.
  6. 6. Let the spices work on the fish for a short time.
  7. 7. Peel the white asparagus thoroughly.
  8. 8. Wash the green asparagus.
  9. 9. Remove the woody lower ends from both types of asparagus.
  10. 10. Cut the asparagus diagonally into pieces 2 to 3 centimeters long.
  11. 11. Bring a pot of water to a boil.
  12. 12. Add salt, sugar, and the remaining lemon juice to the boiling water.
  13. 13. Cook the white asparagus for 7 to 8 minutes.
  14. 14. Add the green asparagus to the same water after about 2 minutes.
  15. 15. Heat oil in a pan.
  16. 16. Fry the salmon for approx. 3 minutes on all sides.
  17. 17. Turn the fish regularly until it is lightly browned.
  18. 18. Cut the pre-cooked potatoes into wedges.
  19. 19. Melt 2 tablespoons of butter in a separate pan.
  20. 20. Toss the potato wedges in the melted butter.
  21. 21. Make sure the potatoes do not turn brown.
  22. 22. Season the potatoes with salt and pepper at the end.
