🍽️ Crispy Salmon with Green and White Asparagus

Ingredients
- 450 g salmon fillet
- salt
- white pepper
- 2 tbsp lemon juice
- 450 g white asparagus
- 350 g green asparagus
- 1 tsp sugar
- 1 tbsp rapeseed oil
- 400 g potatoes (cooked)
- 4 tbsp butter
- parsley (for garnish)
Instructions
- 1. Rinse the salmon under cold water.
- 2. Pat the fish completely dry with a kitchen towel.
- 3. Cut the salmon into cubes of approx. 4 centimeters.
- 4. Season the fish cubes with salt and pepper.
- 5. Add a few drops of lemon juice.
- 6. Let the spices work on the fish for a short time.
- 7. Peel the white asparagus thoroughly.
- 8. Wash the green asparagus.
- 9. Remove the woody lower ends from both types of asparagus.
- 10. Cut the asparagus diagonally into pieces 2 to 3 centimeters long.
- 11. Bring a pot of water to a boil.
- 12. Add salt, sugar, and the remaining lemon juice to the boiling water.
- 13. Cook the white asparagus for 7 to 8 minutes.
- 14. Add the green asparagus to the same water after about 2 minutes.
- 15. Heat oil in a pan.
- 16. Fry the salmon for approx. 3 minutes on all sides.
- 17. Turn the fish regularly until it is lightly browned.
- 18. Cut the pre-cooked potatoes into wedges.
- 19. Melt 2 tablespoons of butter in a separate pan.
- 20. Toss the potato wedges in the melted butter.
- 21. Make sure the potatoes do not turn brown.
- 22. Season the potatoes with salt and pepper at the end.
