🍽️ Green Asparagus with Fresh Herb Dip

Ingredients
- 1.8 kg green asparagus
- salt
- sugar
- 0.5 lemon (juice)
- 2 egg yolks
- 125 g melted butter
- pepper (from the mill)
- 1 handful herbs (e.g. chives, parsley)
- 150 g sour cream
Instructions
- 1. Thoroughly wash the asparagus under running water.
- 2. Peel the bottom two-thirds of the asparagus stalks.
- 3. Cut off the woody ends of the stalks.
- 4. Bring a pot of salted water with a pinch of sugar to a boil.
- 5. Cook the asparagus in it for 8 minutes.
- 6. Remove the asparagus from the water and let it drain.
- 7. Whisk lemon juice and egg yolks in a water bath until the mixture is frothy.
- 8. Stir in the butter slowly until the sauce becomes creamy.
- 9. Season the sauce with salt and pepper.
- 10. Wash the herbs and shake them dry.
- 11. Finely chop the herbs.
- 12. Stir the chopped herbs into the sauce.
- 13. Mix the lukewarm sauce with sour cream.
- 14. Drizzle the sauce onto the plates.
- 15. Place the asparagus on top of the sauce.
