  1. 1. Thoroughly wash the asparagus under running water.
  2. 2. Peel the bottom two-thirds of the asparagus stalks.
  3. 3. Cut off the woody ends of the stalks.
  4. 4. Bring a pot of salted water with a pinch of sugar to a boil.
  5. 5. Cook the asparagus in it for 8 minutes.
  6. 6. Remove the asparagus from the water and let it drain.
  7. 7. Whisk lemon juice and egg yolks in a water bath until the mixture is frothy.
  8. 8. Stir in the butter slowly until the sauce becomes creamy.
  9. 9. Season the sauce with salt and pepper.
  10. 10. Wash the herbs and shake them dry.
  11. 11. Finely chop the herbs.
  12. 12. Stir the chopped herbs into the sauce.
  13. 13. Mix the lukewarm sauce with sour cream.
  14. 14. Drizzle the sauce onto the plates.
  15. 15. Place the asparagus on top of the sauce.
