  1. 1. Soak the gelatin in cold water.
  2. 2. Squeeze out the gelatin and dissolve it in slightly warmed white wine.
  3. 3. Stir the yogurt until smooth.
  4. 4. Season the yogurt with salt, pepper, and lemon juice.
  5. 5. Stir the gelatin into the yogurt quickly.
  6. 6. Gently fold in half of the chive leaves.
  7. 7. Pour the mixture into a shallow dish lined with plastic wrap.
  8. 8. Sprinkle the surface with the remaining chive leaves.
  9. 9. Let the yogurt mixture set for at least 4 hours.
  10. 10. Peel the asparagus.
  11. 11. Cook the asparagus in boiling water with sugar and salt for approx. 20 minutes until tender.
  12. 12. Drain the asparagus.
  13. 13. Toss the asparagus briefly in the remaining hot butter.
  14. 14. Distribute the asparagus onto plates.
  15. 15. Unmold the yogurt.
  16. 16. Remove the foil.
  17. 17. Cut the yogurt into sticks.
  18. 18. Let the yogurt sticks melt over the asparagus.
