🍽️ Asparagus with Chive Yogurt Sticks

Ingredients
- 5 sheets gelatin
- 2 tbsp dry white wine
- 300 g yogurt
- salt
- white pepper
- 1 dash lemon juice
- 1 small handful chervil
- 1 kg asparagus
- 1 tsp sugar
- 1 tsp salt
- 2 tbsp butter
Instructions
- 1. Soak the gelatin in cold water.
- 2. Squeeze out the gelatin and dissolve it in slightly warmed white wine.
- 3. Stir the yogurt until smooth.
- 4. Season the yogurt with salt, pepper, and lemon juice.
- 5. Stir the gelatin into the yogurt quickly.
- 6. Gently fold in half of the chive leaves.
- 7. Pour the mixture into a shallow dish lined with plastic wrap.
- 8. Sprinkle the surface with the remaining chive leaves.
- 9. Let the yogurt mixture set for at least 4 hours.
- 10. Peel the asparagus.
- 11. Cook the asparagus in boiling water with sugar and salt for approx. 20 minutes until tender.
- 12. Drain the asparagus.
- 13. Toss the asparagus briefly in the remaining hot butter.
- 14. Distribute the asparagus onto plates.
- 15. Unmold the yogurt.
- 16. Remove the foil.
- 17. Cut the yogurt into sticks.
- 18. Let the yogurt sticks melt over the asparagus.
