🍽️ Asparagus with Crumbs and Egg

Ingredients
- 800 g green asparagus tips
- salt
- 1 tsp sugar
- 2 tbsp lemon juice
- 2 tbsp white balsamic vinegar
- 4 tbsp rapeseed oil
- pepper (from the mill)
- 2 hard-boiled eggs
- 2 fresh garlic cloves
- 2 tbsp breadcrumbs
- 2 tbsp chopped hazelnuts
- 2 tbsp butter
- 2 tbsp freshly chopped parsley
Instructions
- 1. Bring water to a boil and add salt and sugar.
- 2. Add the asparagus to the boiling water.
- 3. Cook the asparagus for 6 to 8 minutes until it still has a slight bite.
- 4. Whisk lemon juice, vinegar, oil, salt, and pepper for the marinade.
- 5. Season the marinade with salt and pepper to taste.
- 6. Drain the asparagus and place it on a plate.
- 7. Drizzle the asparagus with the marinade.
- 8. Let the asparagus cool down to lukewarm.
- 9. Peel the eggs and chop them finely.
- 10. Peel the garlic and chop it finely.
- 11. Heat butter in a hot pan.
- 12. Add breadcrumbs, nuts, and garlic to the pan.
- 13. Brown the mixture under stirring until golden brown.
- 14. Distribute the breadcrumb mixture over the asparagus.
- 15. Place the chopped egg on top.
- 16. Sprinkle the dish with parsley and serve.
