🍽️ Crispy Frittata with Green Asparagus

Ingredients
- 400 g green asparagus
- 300 g boiled potatoes (from the day before)
- 1 onion
- 2 tbsp butter
- 4 eggs
- 200 g whipping cream
- salt
- pepper (from the mill)
- nutmeg
- 2 tbsp chive rings
Instructions
- 1. Rinse the asparagus under running water.
- 2. Trim off the lower, woody part of the stalks.
- 3. Cut the asparagus into pieces about five centimeters long.
- 4. Boil the asparagus for six minutes in boiling water.
- 5. Shock the asparagus immediately with cold water to keep it crisp.
- 6. Cut the potatoes into small cubes one centimeter in size.
- 7. Peel the onion and cut it into cubes as well.
- 8. Heat the butter in a large pan.
- 9. Add the asparagus, potatoes, and onions to the pan.
- 10. Fry the vegetables over low heat for five minutes.
- 11. Season the vegetables with salt and pepper.
- 12. Whisk the eggs in a bowl with the cream.
- 13. Season the egg mixture with salt, pepper, and a pinch of ground nutmeg.
- 14. Stir the finely chopped chives into the egg mixture.
- 15. Reduce the heat of the pan.
- 16. Pour the egg mixture carefully into the pan.
- 17. Let the frittata set over low heat for eight to ten minutes.
- 18. Remove the frittata from the heat when it is cooked through and firm.
