  1. 1. Rinse the asparagus under running water.
  2. 2. Trim off the lower, woody part of the stalks.
  3. 3. Cut the asparagus into pieces about five centimeters long.
  4. 4. Boil the asparagus for six minutes in boiling water.
  5. 5. Shock the asparagus immediately with cold water to keep it crisp.
  6. 6. Cut the potatoes into small cubes one centimeter in size.
  7. 7. Peel the onion and cut it into cubes as well.
  8. 8. Heat the butter in a large pan.
  9. 9. Add the asparagus, potatoes, and onions to the pan.
  10. 10. Fry the vegetables over low heat for five minutes.
  11. 11. Season the vegetables with salt and pepper.
  12. 12. Whisk the eggs in a bowl with the cream.
  13. 13. Season the egg mixture with salt, pepper, and a pinch of ground nutmeg.
  14. 14. Stir the finely chopped chives into the egg mixture.
  15. 15. Reduce the heat of the pan.
  16. 16. Pour the egg mixture carefully into the pan.
  17. 17. Let the frittata set over low heat for eight to ten minutes.
  18. 18. Remove the frittata from the heat when it is cooked through and firm.
