  4. 4. Fill a large pot with water and add salt and honey.
  5. 5. Bring the water to a boil.
  6. 6. Add the asparagus to the boiling water.
  7. 7. Cook the asparagus for 10 to 13 minutes until it is tender-crisp.
  8. 8. Roughly chop the pumpkin seeds in the meantime.
  9. 9. Cut off the crust from the bread.
  10. 10. Cut the bread into small cubes.
  11. 11. Peel the shallot.
  12. 12. Finely chop the shallot.
  13. 13. Remove the outer leaves from the frisée lettuce.
  14. 14. Wash the frisée lettuce.
  15. 15. Spin the salad dry.
  16. 16. Cut the frisée lettuce into bite-sized pieces.
  17. 17. Take four tablespoons of the asparagus cooking liquid.
  18. 18. Pour the cooking liquid into a bowl.
  19. 19. Add vinegar, salt, pepper, mustard, and pumpkin seed oil.
  20. 20. Whisk the mixture until creamy with a whisk.
  21. 21. Stir the diced shallot into the sauce.
  22. 22. Heat a frying pan.
  23. 23. Fry the bacon slices in the pan until very crispy on both sides.
