🥗 Green Asparagus with Frisée Salad and Crispy Toppings

Ingredients
- 750 g white asparagus (or 500 g pre-peeled)
- salt
- 1 tsp honey
- 30 g peeled pumpkin seeds (2 tbsp)
- 2 slices whole grain bread
- 1 shallot
- 1 frisée lettuce (approx. 250 g, or dandelion)
- 4 tbsp white wine vinegar
- pepper
- 0.5 tsp mustard (medium-hot)
- 3 tbsp pumpkin seed oil
- 40 g turkey bacon (4 thin slices)
Instructions
- 1. Wash the asparagus thoroughly.
- 2. Peel the asparagus carefully using a vegetable peeler.
- 3. Trim off the woody bottom ends of the asparagus stalks generously.
- 4. Fill a large pot with water and add salt and honey.
- 5. Bring the water to a boil.
- 6. Add the asparagus to the boiling water.
- 7. Cook the asparagus for 10 to 13 minutes until it is tender-crisp.
- 8. Roughly chop the pumpkin seeds in the meantime.
- 9. Cut off the crust from the bread.
- 10. Cut the bread into small cubes.
- 11. Peel the shallot.
- 12. Finely chop the shallot.
- 13. Remove the outer leaves from the frisée lettuce.
- 14. Wash the frisée lettuce.
- 15. Spin the salad dry.
- 16. Cut the frisée lettuce into bite-sized pieces.
- 17. Take four tablespoons of the asparagus cooking liquid.
- 18. Pour the cooking liquid into a bowl.
- 19. Add vinegar, salt, pepper, mustard, and pumpkin seed oil.
- 20. Whisk the mixture until creamy with a whisk.
- 21. Stir the diced shallot into the sauce.
- 22. Heat a frying pan.
- 23. Fry the bacon slices in the pan until very crispy on both sides.
- 24. Remove the bacon from the pan.
- 25. Let the bacon drain on kitchen paper.
- 26. Add the bread cubes to the pan.
- 27. Fry the bread cubes in the remaining bacon fat until crispy.
- 28. Lift the asparagus out of the cooking liquid.
- 29. Let the asparagus drain.
- 30. Arrange the frisée salad on plates.
- 31. Place the asparagus on the salad.
- 32. Drizzle the sauce over the salad.
- 33. Add the pumpkin seeds and bread cubes.
- 34. Garnish each plate with a slice of bacon.
- 35. Serve the salad.
