🥗 Fresh Asparagus and Strawberry Salad with Orange Dressing

Ingredients
- 2 organic oranges
- 1 tbsp honey
- 4 tbsp olive oil
- 800 g green asparagus
- salt
- pepper
- 200 g strawberries
- 150 g feta (45% fat in dry matter)
- 4 tbsp balsamic vinegar
Instructions
- 1. Rinse the oranges under hot water and pat them dry.
- 2. Finely grate the zest from one orange.
- 3. Peel the oranges so that you remove all white pith.
- 4. Carefully cut out the fruit segments (filets) between the membranes.
- 5. Catch the released juice in a bowl while doing so.
- 6. Squeeze the juice from the empty membranes and add it to the collected juice.
- 7. Place the fruit segments, the orange zest, and the juice into a pot.
- 8. Add the honey.
- 9. Let the mixture simmer gently for 10 to 12 minutes over medium heat.
- 10. Remove the pot from the heat and let the dressing cool down for 10 minutes.
- 11. Stir 2 tablespoons of oil into the cooled dressing.
- 12. Wash the asparagus and cut off the woody lower ends.
- 13. Peel the bottom third of the asparagus stalks.
- 14. Heat the remaining oil in a frying pan.
- 15. Fry the asparagus in it for 7 to 8 minutes over medium heat.
- 16. Remove the stems from the strawberries and wash them.
- 17. Halve the strawberries.
- 18. Season the asparagus with salt and pepper.
- 19. Place the asparagus on the plates.
- 20. Distribute the halved strawberries over the asparagus.
- 21. Crumble the feta cheese over the top.
- 22. Grind fresh pepper over the salad.
- 23. Drizzle a little balsamic vinegar over it.
- 24. Drizzle the salad with the orange dressing.
- 25. Serve the salad immediately.
