  1. 1. Preheat the oven to 180 degrees Celsius fan-forced.
  2. 2. Grease four small tart molds with butter.
  3. 3. Peel the bottom third of the asparagus stalks.
  4. 4. Cut the asparagus stalks in half.
  5. 5. Cook the asparagus pieces in salted water with a little sugar for about 10 minutes.
  6. 6. Remove the asparagus from the heat before it is completely soft.
  7. 7. Whip the egg whites with a pinch of salt and pepper until stiff.
  8. 8. Set aside four tablespoons of the egg mixture.
  9. 9. Fill the rest of the egg mixture into the prepared tart molds.
  10. 10. Bake the tarts for about 10 minutes in the oven.
  11. 11. Remove the tarts from the oven.
  12. 12. Place the drained asparagus on the tarts.
  13. 13. Place the four tablespoons of egg mixture you set aside in the center of the tarts.
  14. 14. Finish baking the tarts for another 10 minutes.
  15. 15. Remove the tarts from the oven.
  16. 16. Let the tarts cool down.
  17. 17. Garnish the tarts with cress.
  18. 18. Serve the tarts.
