🍰 Asparagus Tarts with Meringue Topping

Ingredients
- 12 stalks asparagus
- salt
- 1 tsp sugar
- 2 egg whites
- white pepper (from the mill)
- butter (for the molds)
- cress (for garnish)
Instructions
- 1. Preheat the oven to 180 degrees Celsius fan-forced.
- 2. Grease four small tart molds with butter.
- 3. Peel the bottom third of the asparagus stalks.
- 4. Cut the asparagus stalks in half.
- 5. Cook the asparagus pieces in salted water with a little sugar for about 10 minutes.
- 6. Remove the asparagus from the heat before it is completely soft.
- 7. Whip the egg whites with a pinch of salt and pepper until stiff.
- 8. Set aside four tablespoons of the egg mixture.
- 9. Fill the rest of the egg mixture into the prepared tart molds.
- 10. Bake the tarts for about 10 minutes in the oven.
- 11. Remove the tarts from the oven.
- 12. Place the drained asparagus on the tarts.
- 13. Place the four tablespoons of egg mixture you set aside in the center of the tarts.
- 14. Finish baking the tarts for another 10 minutes.
- 15. Remove the tarts from the oven.
- 16. Let the tarts cool down.
- 17. Garnish the tarts with cress.
- 18. Serve the tarts.
