  1. 1. Thoroughly wash the asparagus under running water.
  2. 2. Peel the asparagus completely using a vegetable peeler.
  3. 3. Cut off the woody, lower ends of the asparagus stalks.
  4. 4. Finely grate the Grana Padano cheese.
  5. 5. Loosely beat the eggs in a deep plate with a fork.
  6. 6. Mix the breadcrumbs with the grated Grana Padano on a flat plate.
  7. 7. Place the flour with a pinch of salt on a third plate.
  8. 8. Coat the asparagus stalks in the flour first, then shake off excess flour.
  9. 9. Then dip the floured stalks into the beaten eggs.
  10. 10. Finally roll the egg-coated stalks in the breadcrumb-cheese mixture.
  11. 11. Line the basket of the air fryer with baking paper.
  12. 12. Place the breaded asparagus into the air fryer.
  13. 13. Cook the asparagus for 12 minutes at 195 degrees Celsius.
  14. 14. Wash the parsley thoroughly under cold water.
  15. 15. Shake the parsley dry so that no water droplets remain.
  16. 16. Finely chop the parsley.
  17. 17. Remove the asparagus from the air fryer after the cooking time.
  18. 18. Arrange the asparagus on a serving plate.
  19. 19. Sprinkle the freshly cut parsley over the hot asparagus.
