🍽️ Crispy Asparagus from the Air Fryer

Ingredients
- 500 g white asparagus
- 30 g Grana Padano
- 2 eggs
- 4 tbsp whole wheat breadcrumbs (15 g each)
- 4 tbsp spelt flour Type 630 (15 g each)
- salt
- 1 small handful parsley
Instructions
- 1. Thoroughly wash the asparagus under running water.
- 2. Peel the asparagus completely using a vegetable peeler.
- 3. Cut off the woody, lower ends of the asparagus stalks.
- 4. Finely grate the Grana Padano cheese.
- 5. Loosely beat the eggs in a deep plate with a fork.
- 6. Mix the breadcrumbs with the grated Grana Padano on a flat plate.
- 7. Place the flour with a pinch of salt on a third plate.
- 8. Coat the asparagus stalks in the flour first, then shake off excess flour.
- 9. Then dip the floured stalks into the beaten eggs.
- 10. Finally roll the egg-coated stalks in the breadcrumb-cheese mixture.
- 11. Line the basket of the air fryer with baking paper.
- 12. Place the breaded asparagus into the air fryer.
- 13. Cook the asparagus for 12 minutes at 195 degrees Celsius.
- 14. Wash the parsley thoroughly under cold water.
- 15. Shake the parsley dry so that no water droplets remain.
- 16. Finely chop the parsley.
- 17. Remove the asparagus from the air fryer after the cooking time.
- 18. Arrange the asparagus on a serving plate.
- 19. Sprinkle the freshly cut parsley over the hot asparagus.
