🍝 Grilled Spareribs with Fresh Pasta Salad

Ingredients
- 1 clove garlic
- 2 tbsp chili sauce
- 2 tbsp apple cider vinegar
- 2 tbsp ketchup
- 1 tsp honey
- salt
- pepper
- 2 kg pork spare ribs
- 300 g spiral pasta
- 3 tbsp olive oil
- 250 g green beans
- 2 handfuls baby spinach
- 1 red onion
- 40 g dried tomatoes (preserved in oil)
- 2 tbsp white balsamic vinegar
Instructions
- 1. Peel the garlic clove and chop it very finely.
- 2. Mix the chopped garlic in a bowl with the chili sauce, vinegar, ketchup, and honey.
- 3. Season the sauce to taste with salt and pepper.
- 4. Rinse the spare ribs under cold water and pat them dry with a kitchen towel.
- 5. Brush the ribs generously with some of the prepared sauce.
- 6. Preheat your grill and place the ribs on the grate over low heat.
- 7. Make sure the ribs have sufficient distance from the hot embers.
- 8. Grill the meat pieces for about 40 minutes.
- 9. Turn the ribs regularly during the cooking time.
- 10. Brush the meat with the remaining sauce repeatedly in between.
- 11. Bring a large pot of salted water to a boil.
- 12. Cook the pasta in it al dente (firm to the bite).
- 13. Shock the pasta immediately with cold water to stop the cooking process.
- 14. Let the pasta drain well.
- 15. Toss the drained pasta with one tablespoon of oil so they do not stick together.
- 16. Wash the beans under running water.
- 17. Remove the hard ends and fibers of the beans (trim).
- 18. Cook the beans in salted water for about 8 minutes until tender.
- 19. Shock the beans with cold water as well and let them drain well.
- 20. Wash the spinach thoroughly.
- 21. Remove any hard stems from the spinach.
- 22. Dry the spinach, for example in a salad spinner.
- 23. Peel the onion.
- 24. Halve the onion and cut it into thin strips.
- 25. Take the drained tomatoes out of the can or jar.
- 26. Chop the tomatoes roughly into small pieces.
- 27. Mix the remaining oil with the balsamic vinegar.
- 28. Season the dressing mixture with salt and pepper.
- 29. Add all prepared salad ingredients (pasta, beans, spinach, onions, tomatoes) to a large bowl.
- 30. Pour the dressing over the ingredients and mix everything well together.
- 31. Cut the grilled spare ribs into individual portions.
- 32. Serve the meat pieces together with the cold pasta salad.
