🍽️ Tender Spareribs with Sweet-Spicy Marinade

Ingredients
- 1.2 kg Spareribs
- 1 Onion
- 4 tbsp Sugar
- 80 ml Apple Vinegar
- 150 ml dry White Wine
- 1 Star Anise
- 1 Bay Leaf
- 1 tsp Black Peppercorns
- 1 tsp Mustard Seeds
- 80 g Orange Marmalade
- Soy Sauce
- 1 tbsp Ketchup
- 1 tbsp Chili Sauce
- 1 tbsp Sesame Oil
- Salt
Instructions
- 1. Rinse the spare ribs under running water.
- 2. Pat the meat pieces completely dry with kitchen paper.
- 3. Divide the ribs into smaller portions by separating them roughly every four ribs.
- 4. Peel the dry skin off the onion.
- 5. Cut the onion into coarse cubes.
- 6. Put the sugar into a large pot.
- 7. Heat the sugar until it caramelizes to a light brown color.
- 8. Deglaze the caramel with a splash of vinegar.
- 9. Boil the mixture briefly until the sugar has completely dissolved.
- 10. Pour the white wine into the pot.
- 11. Add the remaining apple cider vinegar.
- 12. Pour 1 liter of water into the liquid.
- 13. Add anise, bay leaves, peppercorns, and mustard seeds to the pot.
- 14. Add the chopped onions to the broth.
- 15. Place the spare ribs into the pot.
- 16. Let the ribs simmer for about 40 minutes over low heat.
- 17. Put the orange marmalade into a small pot.
- 18. Add 2 tablespoons of water to the marmalade.
- 19. Stir the mixture until smooth with no lumps remaining.
- 20. Let the marmalade mixture reduce briefly.
- 21. Strain the liquid through a fine sieve to smooth it out.
- 22. Mix the strained marmalade with ketchup.
- 23. Add chili sauce to the marinade.
- 24. Stir some oil into the sauce.
- 25. Finally season the marinade with soy sauce.
- 26. Remove the cooked spare ribs from the cooking broth.
- 27. Let the meat pieces cool down completely.
- 28. Separate the individual ribs from each other.
- 29. Coat the spare ribs generously with the prepared marinade.
- 30. Cover the marinated spare ribs.
- 31. Let the meat marinate overnight in the refrigerator.
- 32. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 33. Line a baking tray with baking paper.
- 34. Place the marinated spare ribs on the prepared tray.
- 35. Bake the ribs in the oven for about 30 minutes.
- 36. Serve the finished spare ribs immediately while hot.
