🍽️ Tasty Spanish Rice Pan

Ingredients
- 300 g quick-cooking rice
- 250 g chorizo (air-dried garlic sausage)
- 300 g mixed vegetables cut small (zucchini, peppers, tomatoes,.... small carrots)
- 1 onion (coarsely chopped)
- 2 tsp thyme leaves
- 600 ml vegetable broth
- 250 ml tomato juice
- 6 stuffed green olives
- salt
- pepper
- cayenne pepper
- olive oil
Instructions
- 1. Slice the sausage into round pieces.
- 2. Heat some olive oil in a pan.
- 3. Fry the sausage slices briefly.
- 4. Remove the sausage from the pan and set it aside.
- 5. Add the onions to the remaining fat in the pan.
- 6. Sweat the onions briefly.
- 7. Add the vegetables and the thyme.
- 8. Let the vegetables and thyme cook briefly.
- 9. Stir in the rice.
- 10. Sauté the rice briefly.
- 11. Pour the tomato juice into the pan.
- 12. Pour the broth into the pan.
- 13. Cover the pan with a lid.
- 14. Let the rice cook on low heat for 10 minutes.
- 15. Slice the olives into thin pieces.
- 16. Stir the olive slices into the finished rice.
- 17. Season the dish with salt.
- 18. Season the dish with pepper.
- 19. Season the dish with a pinch of cayenne pepper.
- 20. Fold the sausage slices into the rice.
- 21. Serve the dish.
