  1. 1. Wash the mussels thoroughly and discard any damaged or open shells.
  2. 2. Rinse the shrimp under cold water and pat them dry with a kitchen towel.
  3. 3. Slice the chorizo sausage into bite-sized pieces.
  4. 4. Wash the beans, trim the ends, and cut them into pieces about 2 centimeters long.
  5. 5. Wash the bell pepper, halve it, remove the core, and cut the flesh into small cubes.
  6. 6. Blanch the tomatoes with boiling water, shock them immediately in cold water, and peel off the skin.
  7. 7. Quarter the peeled tomatoes and cut them into small pieces.
  8. 8. Wash the spring onions, dry them well, and slice them diagonally into thin rings.
  9. 9. Heat the oil in a large, deep pan.
  10. 10. Sauté the spring onion rings and bell pepper cubes in the oil until they are soft.
  11. 11. Add the rice to the pan and stir briefly.
  12. 12. Deglaze the dish with the wine.
  13. 13. Pour in the broth and stir in the saffron.
  14. 14. Let everything simmer on medium heat for 20 to 25 minutes.
  15. 15. Add the mussels, shrimp, and beans to the pan 10 minutes before the end of the cooking time.
  16. 16. Stir everything well and place the lid on the pan.
  17. 17. Let the dish finish cooking until the liquid has been absorbed.
  18. 18. Add the tomato pieces and chorizo slices and mix them in gently.
  19. 19. Season the paella to taste with salt and pepper.
  20. 20. Serve the dish directly from the pan.
