🍽️ Classic Spanish Paella

Ingredients
- 350 g mussels
- 250 g shrimp (peeled and deveined)
- 250 g chorizo
- 200 g fresh green beans
- 1 red bell pepper
- 4 ripe tomatoes
- 3 spring onions
- 2 tbsp olive oil
- 300 g short-grain rice
- 0.3 g saffron threads
- 100 ml dry white wine
- 600 ml vegetable broth
- salt
- pepper (from the mill)
Instructions
- 1. Wash the mussels thoroughly and discard any damaged or open shells.
- 2. Rinse the shrimp under cold water and pat them dry with a kitchen towel.
- 3. Slice the chorizo sausage into bite-sized pieces.
- 4. Wash the beans, trim the ends, and cut them into pieces about 2 centimeters long.
- 5. Wash the bell pepper, halve it, remove the core, and cut the flesh into small cubes.
- 6. Blanch the tomatoes with boiling water, shock them immediately in cold water, and peel off the skin.
- 7. Quarter the peeled tomatoes and cut them into small pieces.
- 8. Wash the spring onions, dry them well, and slice them diagonally into thin rings.
- 9. Heat the oil in a large, deep pan.
- 10. Sauté the spring onion rings and bell pepper cubes in the oil until they are soft.
- 11. Add the rice to the pan and stir briefly.
- 12. Deglaze the dish with the wine.
- 13. Pour in the broth and stir in the saffron.
- 14. Let everything simmer on medium heat for 20 to 25 minutes.
- 15. Add the mussels, shrimp, and beans to the pan 10 minutes before the end of the cooking time.
- 16. Stir everything well and place the lid on the pan.
- 17. Let the dish finish cooking until the liquid has been absorbed.
- 18. Add the tomato pieces and chorizo slices and mix them in gently.
- 19. Season the paella to taste with salt and pepper.
- 20. Serve the dish directly from the pan.
