🍽️ Crispy Pork Roast

Ingredients
- 1 kg boneless pork loin (from 0.5 boneless pork loin)
- 1 sprig rosemary
- 1 sprig thyme
- 1 tsp Dijon mustard
- 1 tsp honey
- 4 tbsp oil
- salt
- pepper (from the mill)
- kitchen twine (for tying)
Instructions
- 1. Fill a pot with water and heat it up.
- 2. Place the meat fat-side down in the hot water for about 30 minutes to soften the skin. Then score the skin in a diamond pattern with a knife. Gently flatten the meat side.
- 3. Remove the meat from the water and pat it dry.
- 4. Season the meat with salt and pepper. Coat it with chopped rosemary, mustard, and slightly warmed honey.
- 5. Roll up the meat and tie it securely with kitchen twine.
- 6. Tighten the twine.
- 7. Season the outside of the roll again with salt and pepper. Sear it on all sides in hot oil.
- 8. Place the roll in a preheated oven at 180 degrees Celsius with top and bottom heat. Bake for about 20 to 25 minutes. Remove it, let it cool slightly, and wrap it tightly in plastic wrap. Then wrap the plastic in aluminum foil.
- 9. Let the roast cool completely. Slice it into thin slices and serve with a vinaigrette.
