🍽️ Crispy Pork Roast with Apple Fritters

Ingredients
- 1 pork loin (from approx. 1 kg)
- 300 g onions
- 2 garlic cloves
- 50 g fat (for the roasting pan)
- 200 ml wheat beer
- 500 ml meat broth
- 1 package potato dumplings (Half and Half)
- 2 sour apples
- 150 g flour
- 150 g wheat beer
- 1 egg yolk
- 1 tsp caraway seeds
- 2 egg whites
- salt
- fat (for frying)
- 4 carrots
- 100 g beans
- 2 shallots
- savoy cabbage (light)
- 2 tbsp butter
Instructions
- 1. Have the butcher prepare the pork loin so that the rib bones are exposed for about 3 centimeters.
- 2. Rinse the meat under running water.
- 3. Pat the meat completely dry with kitchen paper.
- 4. Rub the meat thoroughly with salt, pepper, and cumin.
- 5. Peel the garlic cloves.
- 6. Press the garlic cloves into a paste.
- 7. Spread the garlic paste evenly over the meat.
- 8. Peel the onions.
- 9. Cut the onions into coarse cubes.
- 10. Grease a roasting pan or Dutch oven with fat.
- 11. Add the onion cubes to the pan.
- 12. Place the meat on top of the onions.
- 13. Preheat the oven to 180 degrees Celsius (top and bottom heat).
- 14. Roast the meat in the preheated oven for 30 to 40 minutes.
- 15. Pour white beer over the meat repeatedly during cooking.
- 16. Score the crackling of the roast.
- 17. Increase the oven temperature to 200 degrees Celsius.
- 18. Finish roasting the meat for another 20 minutes.
- 19. Add about 100 milliliters of water if the pan is too dry.
- 20. Wash the carrots.
- 21. Peel the carrots.
- 22. Cut the carrots into coarse diagonal pieces.
- 23. Wash the beans.
- 24. Trim the ends of the beans.
- 25. Wash the savoy cabbage leaves.
- 26. Peel the shallots.
- 27. Quarter the shallots.
- 28. Bring salted water to a boil.
- 29. Blanch the vegetables in the boiling water for 5 minutes.
- 30. Drain the vegetables.
- 31. Shock the vegetables immediately with cold water.
- 32. Let the vegetables drain well.
- 33. Mix a smooth batter from flour, white beer, egg yolk, salt, and cumin.
- 34. Beat the egg whites until very stiff.
- 35. Gently fold the egg whites into the batter.
- 36. Peel the apples.
- 37. Remove the core of the apples.
- 38. Quarter the apples.
- 39. Dredge the apple quarters in flour first.
- 40. Then dip the apple quarters through the batter.
- 41. Heat oil in a pan until hot.
- 42. Fry the apple fritters in the hot oil for about 4 minutes until golden brown.
- 43. Prepare the potato dumplings according to the package instructions.
- 44. Heat butter in a pan.
- 45. Warm the vegetables through in the butter.
- 46. Slice the pork loin.
- 47. Serve the roast with the apple fritters, vegetables, potato dumplings, and white beer sauce.
