🍝 Fresh Pasta Salad with Pine Nuts

Ingredients
- 400 g Whole wheat spaghetti
- Salt
- 6 Tomatoes
- 2 sprigs Parsley
- 4 tbsp Olive oil
- 1 tbsp Lemon juice
- 50 ml Vegetable broth
- Pepper
- 4 tbsp Pine nuts (15 g each)
Instructions
- 1. Bring plenty of water to a boil and add some salt.
- 2. Cook the spaghetti in it for 9 to 11 minutes until al dente.
- 3. Drain the pasta in a colander and let it drip dry.
- 4. Wash the tomatoes and remove the hard stem areas.
- 5. Cut the tomatoes into small cubes.
- 6. Wash the parsley and shake it dry.
- 7. Finely chop the parsley.
- 8. Whisk the olive oil, lemon juice, and vegetable broth together in a small bowl.
- 9. Season the sauce with salt and pepper to taste.
- 10. Heat a frying pan over medium heat.
- 11. Toast the pine nuts in it for 3 minutes without additional fat.
- 12. Add the drained spaghetti, tomato cubes, and parsley to a large bowl.
- 13. Pour the prepared sauce over the ingredients.
- 14. Mix everything well until everything is evenly coated.
- 15. Roughly chop the toasted pine nuts.
- 16. Distribute the salad into airtight containers.
- 17. Sprinkle the chopped pine nuts over the salad at the end.
