  1. 1. Bring plenty of water to a boil and add some salt.
  2. 2. Cook the spaghetti in it for 9 to 11 minutes until al dente.
  3. 3. Drain the pasta in a colander and let it drip dry.
  4. 4. Wash the tomatoes and remove the hard stem areas.
  5. 5. Cut the tomatoes into small cubes.
  6. 6. Wash the parsley and shake it dry.
  7. 7. Finely chop the parsley.
  8. 8. Whisk the olive oil, lemon juice, and vegetable broth together in a small bowl.
  9. 9. Season the sauce with salt and pepper to taste.
  10. 10. Heat a frying pan over medium heat.
  11. 11. Toast the pine nuts in it for 3 minutes without additional fat.
  12. 12. Add the drained spaghetti, tomato cubes, and parsley to a large bowl.
  13. 13. Pour the prepared sauce over the ingredients.
  14. 14. Mix everything well until everything is evenly coated.
  15. 15. Roughly chop the toasted pine nuts.
  16. 16. Distribute the salad into airtight containers.
  17. 17. Sprinkle the chopped pine nuts over the salad at the end.
