  1. 1. Toast the pine nuts in a small pan until fragrant. Remove them and place them on a plate.
  2. 2. Peel the carrots. Cut the peppers into quarters, remove the seeds, and rinse. Wash the zucchini and cut everything into small, bite-sized pieces.
  3. 3. Lightly brush a grill pan with olive oil. Heat the pan and fry the vegetables in batches for 1 to 2 minutes. Add a little more oil before adding the next batch.
  4. 4. Peel the garlic, slice it, and fry it briefly at the end.
  5. 5. Cook the spaghetti in plenty of boiling salted water until al dente (firm to the bite). Drain and mix with the vegetables and pine nuts.
  6. 6. Crumble the goat cheese over the top and serve garnished with fresh basil.
