🍝 Pasta with Grilled Vegetables and Goat Cheese

Ingredients
- 2 tbsp pine nuts
- 2 large carrots
- 1 red bell pepper
- 1 yellow bell pepper
- 1 zucchini
- 2 garlic cloves
- 1 tbsp olive oil
- 500 g spaghetti
- salt
- pepper from the mill
- 50 g goat cheese
- basil (for garnish)
Instructions
- 1. Toast the pine nuts in a small pan until fragrant. Remove them and place them on a plate.
- 2. Peel the carrots. Cut the peppers into quarters, remove the seeds, and rinse. Wash the zucchini and cut everything into small, bite-sized pieces.
- 3. Lightly brush a grill pan with olive oil. Heat the pan and fry the vegetables in batches for 1 to 2 minutes. Add a little more oil before adding the next batch.
- 4. Peel the garlic, slice it, and fry it briefly at the end.
- 5. Cook the spaghetti in plenty of boiling salted water until al dente (firm to the bite). Drain and mix with the vegetables and pine nuts.
- 6. Crumble the goat cheese over the top and serve garnished with fresh basil.
