🍝 Whole Wheat Spaghetti with Chard and Mushrooms

Ingredients
- 1 shallot
- 200 g shiitake mushrooms
- 500 g chard (1 small plant)
- salt
- 1 tbsp olive oil
- 2 tsp mild curry powder
- 50 ml vegetable broth
- 100 g crème fraîche
- pepper
- 300 g whole wheat spaghetti (or whole wheat fettuccine)
Instructions
- 1. Peel the shallot.
- 2. Dice the shallot finely.
- 3. Clean the mushrooms.
- 4. Cut off the mushroom stems.
- 5. Halve or quarter the mushroom caps depending on their size.
- 6. Wash the chard thoroughly.
- 7. Remove the tough stems from the chard.
- 8. Chop the chard leaves into small pieces.
- 9. Fill a pot with water and add plenty of salt.
- 10. Bring the salted water to a boil.
- 11. Heat oil in a non-stick pan.
- 12. Sauté the diced shallot briefly over medium heat.
- 13. Add the mushrooms to the shallot in the pan.
- 14. Fry the mushrooms.
- 15. Sprinkle curry powder over the mushrooms.
- 16. Fry the curry briefly along with the mushrooms.
- 17. Stir the chopped chard leaves into the mushroom mixture.
- 18. Add broth to the pan.
- 19. Add crème fraîche to the pan.
- 20. Season the sauce with salt.
- 21. Season the sauce with pepper.
- 22. Simmer the mixture over medium heat for 8 to 10 minutes.
- 23. Add the whole wheat spaghetti to the boiling salted water.
- 24. Cook the pasta according to the package instructions.
- 25. Drain the cooked pasta in a colander.
- 26. Reserve 2 to 3 tablespoons of pasta water.
- 27. Stir the reserved pasta water into the chard and mushroom sauce.
- 28. Let the whole wheat spaghetti drain well.
- 29. Serve the pasta together with the chard.
