🍝 Spaghetti with Calamari

Ingredients
- 500 g small squid (Calamaretti, kitchen-ready)
- 1 red chili pepper
- 4 garlic cloves
- 400 g cherry tomatoes
- 400 g spaghetti
- salt
- 0.5 bunch flat-leaf parsley
- 4 tbsp olive oil
- pepper
Instructions
- 1. Remove the dark skin from the calamari, if present.
- 2. Wash the calamari thoroughly and pat them dry.
- 3. Make small slits in the surface of the squid.
- 4. Wash the chili pepper and remove the seeds.
- 5. Finely chop the chili and rinse if necessary.
- 6. Peel the garlic cloves and slice them thinly.
- 7. Wash the cherry tomatoes and cut them into quarters.
- 8. Bring water to a boil and add salt.
- 9. Cook the spaghetti al dente according to the package instructions.
- 10. Wash the parsley and pat it dry.
- 11. Pluck the parsley leaves and chop them finely.
- 12. Heat the oil in a large pan.
- 13. Sauté the garlic and chili in the oil.
- 14. Add the calamari to the pan.
- 15. Fry the squid for about 30 seconds over high heat.
- 16. Add the cherry tomatoes and fry for 1-2 minutes.
- 17. Lightly salt the tomatoes.
- 18. Lift the spaghetti out of the water with a pasta server.
- 19. Let the noodles drain briefly.
- 20. Add the spaghetti to the pan.
- 21. Reserve some pasta cooking water for later.
- 22. Add the chopped parsley to the pan.
- 23. Mix everything gently.
- 24. Season with salt and pepper to taste.
- 25. Add some pasta cooking water if needed.
- 26. Serve the dish as desired.
