  1. 1. Put the flour into a large bowl.
  2. 2. Crack the eggs into the bowl.
  3. 3. Season the mixture with one teaspoon of salt and a pinch of ground nutmeg.
  4. 4. Mix everything vigorously using the dough hooks of your hand mixer or a cooking spoon.
  5. 5. Stir until the batter is thick and starts to form bubbles.
  6. 6. If the batter is too thick, add a little cold water gradually.
  7. 7. The batter is ready when it falls off the spoon in a thick, tearing ribbon.
  8. 8. Let the batter rest for about ten minutes.
  9. 9. Peel the onions.
  10. 10. Slice the onions into thin rings.
  11. 11. Heat the oil together with the butter in a frying pan.
  12. 12. Fry the onion rings slowly over medium heat until golden brown.
  13. 13. This should take about ten to twelve minutes.
  14. 14. Fill a wide pot with water until about four centimeters below the rim.
  15. 15. Salt the water.
  16. 16. Bring the water to a boil with the lid on.
  17. 17. Grate the cheese finely.
  18. 18. Press the spätzle batter in portions through a spätzle press or a spätzle scraper into the boiling water.
  19. 19. Let the spätzles come to a boil briefly.
  20. 20. Stir the spätzles a few times.
  21. 21. Remove the spätzles with a slotted spoon as soon as they float to the surface of the water.
  22. 22. Let the spätzles drain well.
  23. 23. Place the spätzles in an ovenproof pan or a baking dish.
  24. 24. Sprinkle some cheese over the spätzles.
  25. 25. Distribute the fried onions on top.
  26. 26. Repeat the layers for all remaining spätzles.
  27. 27. Finally, cover the top layer with cheese and some onions.
  28. 28. Preheat the oven to 160 degrees (fan: 140 degrees; gas: setting 2).
  29. 29. Bake the dish for five to ten minutes until the cheese is melted.
  30. 30. Sprinkle the finished dish with fresh chives.
  31. 31. Serve the spätzle gratin hot.
