🍽️ Cheese and Onion Spätzle Gratin

Ingredients
- 350 g spelt flour Type 1050
- 5 eggs
- salt
- nutmeg (freshly grated)
- 200 g alpine cheese (1 piece)
- 2 onions
- 1 tbsp rapeseed oil
- 1 tbsp butter
- pepper
- chive rings (for garnishing)
Instructions
- 1. Put the flour into a large bowl.
- 2. Crack the eggs into the bowl.
- 3. Season the mixture with one teaspoon of salt and a pinch of ground nutmeg.
- 4. Mix everything vigorously using the dough hooks of your hand mixer or a cooking spoon.
- 5. Stir until the batter is thick and starts to form bubbles.
- 6. If the batter is too thick, add a little cold water gradually.
- 7. The batter is ready when it falls off the spoon in a thick, tearing ribbon.
- 8. Let the batter rest for about ten minutes.
- 9. Peel the onions.
- 10. Slice the onions into thin rings.
- 11. Heat the oil together with the butter in a frying pan.
- 12. Fry the onion rings slowly over medium heat until golden brown.
- 13. This should take about ten to twelve minutes.
- 14. Fill a wide pot with water until about four centimeters below the rim.
- 15. Salt the water.
- 16. Bring the water to a boil with the lid on.
- 17. Grate the cheese finely.
- 18. Press the spätzle batter in portions through a spätzle press or a spätzle scraper into the boiling water.
- 19. Let the spätzles come to a boil briefly.
- 20. Stir the spätzles a few times.
- 21. Remove the spätzles with a slotted spoon as soon as they float to the surface of the water.
- 22. Let the spätzles drain well.
- 23. Place the spätzles in an ovenproof pan or a baking dish.
- 24. Sprinkle some cheese over the spätzles.
- 25. Distribute the fried onions on top.
- 26. Repeat the layers for all remaining spätzles.
- 27. Finally, cover the top layer with cheese and some onions.
- 28. Preheat the oven to 160 degrees (fan: 140 degrees; gas: setting 2).
- 29. Bake the dish for five to ten minutes until the cheese is melted.
- 30. Sprinkle the finished dish with fresh chives.
- 31. Serve the spätzle gratin hot.
