🍽️ Spätzle with Spicy Lentils

Ingredients
- 300 g Spelt flour Type 1050
- 200 ml Water
- 3 Eggs
- 0.5 tsp Salt
- 350 g Puy lentils
- 1 bunch Soup vegetables (diced)
- Pepper
- 2 Shallots
- 2 tbsp White wine vinegar
- 4 Vienna sausages
Instructions
- 1. Put flour and salt into a bowl.
- 2. Stir the mixture smoothly with about 100 milliliters of water.
- 3. Knead the eggs into the dough.
- 4. Add more water gradually.
- 5. Stop adding water once a tough dough forms.
- 6. Knead the dough on the highest setting with a hand mixer.
- 7. Continue kneading until the dough throws bubbles.
- 8. Let the dough swell for 30 minutes.
- 9. Rinse the lentils with hot water.
- 10. Let the lentils drain.
- 11. Chop the soup greens finely.
- 12. Cook the lentils with the soup greens and a little water.
- 13. Cook the vegetables for about 30 minutes.
- 14. Cook the vegetables just covered with liquid.
- 15. Peel the shallots.
- 16. Dice the shallots.
- 17. Roast the shallots.
- 18. Add the shallots to the vegetables after half the cooking time.
- 19. Season the vegetables with vinegar.
- 20. Season the vegetables with salt.
- 21. Season the vegetables with pepper.
- 22. Thicken the vegetables if necessary.
- 23. Cut the Vienna sausages into pieces.
- 24. Add the sausages to the lentils at the end.
- 25. Let the sausages get hot for about 5 minutes.
- 26. Heat plenty of salted water in a large pot.
- 27. Fill some dough into a spätzle press.
- 28. Press the spätzle into the boiling water.
- 29. Let the spätzle come to a boil once.
- 30. Skim the spätzle.
- 31. Let the spätzle drain.
- 32. Plate the spätzle with the lentils.
- 33. Serve the dish.
