  1. 1. Grease four small soufflé dishes (each approx. 8 cm in diameter) with butter.
  2. 2. Sprinkle some sugar into the greased dishes and tilt them so the sugar coats the entire interior.
  3. 3. Bring the milk to a boil in a small saucepan.
  4. 4. Mix flour and butter into a roll and cut it into small pieces.
  5. 5. Stir the flour-butter pieces into the boiling milk one by one.
  6. 6. Continue stirring until a homogeneous, smooth mass has formed.
  7. 7. Remove the saucepan from the heat.
  8. 8. Quickly stir one egg white into the hot mixture.
  9. 9. Add lemon juice and mix it thoroughly with the mixture.
  10. 10. Preheat the oven to 200 degrees Celsius with top and bottom heat.
  11. 11. Pour the mixture from the saucepan into a separate bowl.
  12. 12. Let the mixture cool down in the bowl.
  13. 13. Add the egg yolks one by one.
  14. 14. Stir with a whisk until the mixture is smooth and creamy again.
  15. 15. Peel the apples and remove the core.
  16. 16. Cut the apples into small cubes.
  17. 17. Gently fold the apple cubes into the egg mixture.
  18. 18. Whip the remaining egg white until stiff.
  19. 19. Mix the stiffly whipped egg white with the honey.
  20. 20. Gently fold the honey-egg white mixture under the apple-egg mixture.
  21. 21. Fill the soufflé mixture into the prepared dishes.
  22. 22. Fill the dishes to about 1 cm below the rim.
  23. 23. Prepare a water bath with hot water.
  24. 24. Place the dishes into the water bath.
  25. 25. The water should reach halfway up the sides of the dishes.
  26. 26. Slide the water bath into the preheated oven.
  27. 27. Bake the soufflés for approx. 30 minutes.
  28. 28. Remove the soufflés from the oven.
  29. 29. Decorate the soufflés with lavender flowers.
  30. 30. Additionally decorate with fresh apple cubes.
  31. 31. Serve the soufflés immediately, while still hot.
