🍽️ Apple Lavender Honey Soufflés

Ingredients
- Butter (for the molds)
- Sugar (for the molds)
- 100 ml Milk
- 25 g Butter
- 25 g Flour
- 2 Egg whites
- 2 Egg yolks
- 2 tbsp Lemon juice
- 45 g Lavender honey
- 2 Apples (Granny Smith)
- Lavender flowers (for decoration)
- Apple cubes (for decoration)
Instructions
- 1. Grease four small soufflé dishes (each approx. 8 cm in diameter) with butter.
- 2. Sprinkle some sugar into the greased dishes and tilt them so the sugar coats the entire interior.
- 3. Bring the milk to a boil in a small saucepan.
- 4. Mix flour and butter into a roll and cut it into small pieces.
- 5. Stir the flour-butter pieces into the boiling milk one by one.
- 6. Continue stirring until a homogeneous, smooth mass has formed.
- 7. Remove the saucepan from the heat.
- 8. Quickly stir one egg white into the hot mixture.
- 9. Add lemon juice and mix it thoroughly with the mixture.
- 10. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 11. Pour the mixture from the saucepan into a separate bowl.
- 12. Let the mixture cool down in the bowl.
- 13. Add the egg yolks one by one.
- 14. Stir with a whisk until the mixture is smooth and creamy again.
- 15. Peel the apples and remove the core.
- 16. Cut the apples into small cubes.
- 17. Gently fold the apple cubes into the egg mixture.
- 18. Whip the remaining egg white until stiff.
- 19. Mix the stiffly whipped egg white with the honey.
- 20. Gently fold the honey-egg white mixture under the apple-egg mixture.
- 21. Fill the soufflé mixture into the prepared dishes.
- 22. Fill the dishes to about 1 cm below the rim.
- 23. Prepare a water bath with hot water.
- 24. Place the dishes into the water bath.
- 25. The water should reach halfway up the sides of the dishes.
- 26. Slide the water bath into the preheated oven.
- 27. Bake the soufflés for approx. 30 minutes.
- 28. Remove the soufflés from the oven.
- 29. Decorate the soufflés with lavender flowers.
- 30. Additionally decorate with fresh apple cubes.
- 31. Serve the soufflés immediately, while still hot.
