🍽️ Creamy Crawfish Sauce

Ingredients
- 250 g crayfish (ready for cooking)
- 1 small white onion
- 1 tbsp tomato paste
- 1 tbsp butter
- 150 ml heavy cream
- 150 ml lobster stock
- salt
- white pepper (freshly ground)
- a pinch chili powder
Instructions
- 1. Peel the onion.
- 2. Finely chop the onion.
- 3. Melt the butter in a pan over low heat.
- 4. Sauté the onions gently in it.
- 5. Add the crawfish to the pan.
- 6. Sauté the crawfish along with the onions.
- 7. Pour the cream over the mixture.
- 8. Add the lobster stock.
- 9. Bring the sauce to a boil.
- 10. Reduce the heat to low.
- 11. Stir in the tomato paste.
- 12. Simmer the sauce on low heat until it has reduced to about two-thirds of its original volume.
- 13. Season the sauce with salt.
- 14. Season the sauce with pepper.
- 15. Season the sauce with chili.
