Ingredients
- 1 tbsp Reformhaus® psyllium husk
- 80 g walnut kernels from Lihn (available at Reformhaus®)
- 80 g Reformhaus® cranberries
- 100 g almond flour from Bauck (available at Reformhaus®)
- 150 g oat flour from Bauck (available at Reformhaus®)
- 0.5 tsp clove powder from Brecht (available at Reformhaus®)
- 1 tsp cinnamon powder from Brecht (available at Reformhaus®)
- 1 tsp cream of tartar baking powder from Natura (available at Reformhaus®)
- 0.25 tsp sea salt from Brecht (available at Reformhaus® ())
- 80 g coconut oil from Vitaquell (available at Reformhaus®)
- 60 g date syrup from Rapunzel (available at Reformhaus®)
- 60 g brown almond butter from Rapunzel (available at Reformhaus®)
Instructions
- 1. Pour five tablespoons of cold water into a small bowl.
- 2. Stir the psyllium husks into the water.
- 3. Let the mixture swell for ten minutes.
- 4. Finely chop the walnuts.
- 5. Finely chop the cranberries.
- 6. Add the chopped walnuts and cranberries to a large bowl.
- 7. Add the almond flour to the large bowl.
- 8. Add the oat flour to the large bowl.
- 9. Add the spices to the large bowl.
- 10. Add the baking powder to the large bowl.
- 11. Add the salt to the large bowl.
- 12. Mix all dry ingredients in the large bowl.
- 13. Add the coconut oil to the bowl with the dry mixture.
- 14. Add the date syrup to the bowl.
- 15. Add the almond butter to the bowl.
- 16. Add the swollen psyllium husks to the bowl.
- 17. Knead all ingredients into a smooth dough.
- 18. Cover the dough.
- 19. Place the dough in the refrigerator for about thirty minutes.
- 20. Dust some oat flour on your work surface.
- 21. Roll out the dough to a thickness of about 0.5 centimeters.
- 22. Cut out cookies using cookie cutters or a glass.
- 23. Line a baking sheet with baking paper.
- 24. Place the cookies with some space between them on the baking sheet.
- 25. Preheat the oven to 200 degrees Celsius.
- 26. Bake the cookies for about twelve minutes in the oven.
- 27. Place the cookies on a wire rack.
- 28. Let the cookies cool down on the wire rack.
