🍽️ Fresh Summer Salad with Dressing

Ingredients
- 2 Carrots
- 2 Zucchini
- 100 g Radishes
- 2 Stalks Celery
- 1 Handful Lamb's lettuce
- 5 tbsp Olive oil
- 2 tbsp White balsamic vinegar
- 2 tbsp Lemon juice
- 1 Pinch Sugar
- Salt
- Pepper (from the mill)
- Cress (for garnish)
Instructions
- 1. Peel the carrots and slice them into thin rounds.
- 2. Wash the zucchini and radishes thoroughly.
- 3. Slice the zucchini and radishes into thin rounds as well.
- 4. Wash the celery and cut it into small pieces.
- 5. Wash the salad greens, remove any tough stems, and let them drain well.
- 6. Whisk 3 tablespoons of olive oil with the balsamic vinegar, lemon juice, and sugar in a small bowl.
- 7. Season the dressing to taste with salt and pepper.
- 8. Heat the remaining oil in a frying pan.
- 9. Add the carrots, zucchini, and celery to the pan.
- 10. Sauté the vegetables lightly for 1 to 2 minutes.
- 11. Season the vegetables in the pan with salt and pepper.
- 12. Remove the pan from the heat.
- 13. Let the vegetables cool down to lukewarm.
- 14. Add the radishes to the cooled vegetables and the dressing.
- 15. Mix everything well and let the mixture marinate for about 15 minutes.
- 16. Gently fold the lamb's lettuce into the vegetable mixture.
- 17. Finally, adjust the seasoning of the salad with salt and pepper.
- 18. Distribute the salad into glasses as desired.
- 19. Garnish the salad with cress and serve.
