🍽️ Fresh Summer Salad with Sautéed Turkey Strips

Ingredients
- 300 g mixed leaf salad (head lettuce, romaine.... )
- 4 vine tomatoes
- 1 yellow bell pepper
- 1 chicory
- 400 g turkey breast fillet
- 1 tbsp oil
- 50 ml white wine
- 100 ml poultry broth
- 100 ml whipping cream
- 4 tbsp crème fraîche
- 2 tbsp white wine vinegar
- 1 tsp balsamic vinegar
- 1 tsp apple syrup
- 0.5 tsp mustard
- 4 tbsp olive oil
- 2 tbsp chive rings
- 1 tbsp thyme leaves
- salt
- pepper (from the mill)
Instructions
- 1. Wash the salad leaves thoroughly.
- 2. Dry the leaves well.
- 3. Tear the salad leaves into bite-sized pieces.
- 4. Halve the bell peppers lengthwise.
- 5. Remove the core and seeds from the bell peppers.
- 6. Wash the deseeded pepper halves.
- 7. Cut the peppers into thin strips.
- 8. Wash the tomatoes.
- 9. Dry the tomatoes.
- 10. Cut the tomatoes into eighths.
- 11. Separate the chicory into individual leaves.
- 12. Cut the turkey meat into thin strips.
- 13. Season the turkey strips with salt.
- 14. Season the turkey strips with pepper.
- 15. Heat the oil in a pan.
- 16. Sear the turkey strips over high heat while stirring.
- 17. Cook the turkey for about 4 minutes.
- 18. Remove the cooked turkey from the pan.
- 19. Keep the turkey warm.
- 20. Deglaze the pan juices with wine.
- 21. Let the wine liquid reduce.
- 22. Stir the broth into the pan.
- 23. Add the cream to the sauce.
- 24. Add the crème fraîche to the sauce.
- 25. Let the sauce with cream and crème fraîche reduce slightly.
- 26. Season the sauce with salt.
- 27. Season the sauce with pepper.
- 28. Whisk the vinegars for the dressing.
- 29. Add the mustard to the dressing.
- 30. Season the dressing with salt.
- 31. Season the dressing with pepper.
- 32. Add the apple syrup to the dressing.
- 33. Whisk the dressing ingredients well.
- 34. Stir the oil into the dressing.
- 35. Toss the salad leaves with the dressing.
- 36. Toss the tomato pieces with the dressing.
- 37. Plate the salad.
- 38. Distribute the turkey strips with sauce over the salad.
- 39. Sprinkle chives over the finished salad.
- 40. Sprinkle thyme over the finished salad.
