🍽️ Fruity Bread Salad with Tomatoes

Ingredients
- 120 g Whole wheat baguette or 2 whole wheat rolls (6 slices; 2–4 days old)
- 4 tbsp Olive oil
- 1 Red onion
- 1 Clove of garlic
- 500 g Cherry tomatoes
- 20 g Basil (1 bunch)
- 1 tbsp Balsamic vinegar
- Salt
- Pepper
Instructions
- 1. Cut the whole grain baguette into approx. 2 cm cubes.
- 2. Heat 1 tbsp of olive oil in a pan.
- 3. Fry the bread cubes on all sides in 6–8 minutes until golden brown over medium heat.
- 4. Remove the toasted bread cubes from the pan and set them aside.
- 5. Peel the onion and garlic.
- 6. Halve the onion and cut it into thin strips.
- 7. Finely chop the garlic.
- 8. Heat 1 tbsp of oil in the same pan.
- 9. Sauté the onion strips and garlic over medium heat for 3 minutes.
- 10. Wash the tomatoes and remove the hard stem end if necessary.
- 11. Halve the washed tomatoes.
- 12. Wash the basil and pat it dry with a kitchen towel.
- 13. Pluck the basil leaves from the stems.
- 14. Whisk the remaining oil and vinegar in a large bowl.
- 15. Season the mixture with salt and pepper to taste.
- 16. Add the tomatoes, sautéed onions, basil, and bread cubes to the bowl.
- 17. Mix everything well together.
- 18. Serve the salad immediately.
