🍽️ Hearty Soljanka with Meat and Pickles

Ingredients
- 1 onion
- 50 g bacon
- 1 tbsp rapeseed oil
- 4 tbsp tomato paste
- 250 g strained tomatoes
- 600 ml meat broth
- 80 ml pickle brine
- 1 bay leaf
- 4 pickles
- 150 g cooked beef
- 3 Vienna sausages
- 150 g sauerkraut (can)
- 1 tsp lemon juice
- salt
- pepper
- 4 tbsp sour cream
- 2 tbsp capers
- 1 tbsp dill tips
Instructions
- 1. Peel the onion and cut it into thin strips.
- 2. Cut the bacon into small cubes.
- 3. Heat the oil in a large pot.
- 4. Add the bacon and onions to the pot.
- 5. Sauté the ingredients over medium heat for 4 to 5 minutes.
- 6. Stir in the tomato paste and fry it briefly.
- 7. Deglaze the mixture with the tomatoes and broth.
- 8. Pour in the brine from the pickles.
- 9. Add the bay leaf.
- 10. Bring the soup to a boil.
- 11. Simmer the soup over low heat for about 10 minutes.
- 12. Cut the pickles into strips.
- 13. Cut the meat into strips or small pieces.
- 14. Slice the sausages.
- 15. Drain the sauerkraut well.
- 16. Add all prepared ingredients (pickles, meat, sausages, sauerkraut) to the soup.
- 17. Let everything heat through in the soup.
- 18. Season the Soljanka with lemon juice, salt, and pepper to taste.
- 19. Wash the dill and shake it dry.
- 20. Divide the Soljanka among the plates.
- 21. Garnish the soup with sour cream, capers, and fresh dill.
- 22. Serve the dish immediately.
