🍽️ Marinated Salmon with Snow Pea Salad

Ingredients
- 1 lime
- 1 tbsp honey
- 1 tbsp olive oil
- 2 tbsp soy sauce
- 300 g salmon fillet (in 2 pieces)
- 200 g snow peas
- salt
- 2 tbsp Thai fish sauce
- 2 tsp sesame oil
- 1 green chili pepper
- 1 tbsp sesame
- Also: ice cubes
Instructions
- 1. Squeeze the lime to extract the juice.
- 2. Mix the honey, oil, one tablespoon of lime juice, and one tablespoon of soy sauce in a small bowl.
- 3. Rinse the salmon fillets and pat them dry with a kitchen towel.
- 4. Turn the salmon fillets in the marinade until they are fully coated.
- 5. Let the marinated fillets rest for 20 minutes.
- 6. Remove the tough ends and strings from the snow peas.
- 7. Put the snow peas in boiling salted water for 20 seconds (this is called blanching).
- 8. Fill a bowl with ice cubes and cold water.
- 9. Drain the snow peas and immediately plunge them into the ice water.
- 10. Remove the snow peas and let them drain well.
- 11. Mix the remaining soy sauce, one tablespoon of lime juice, fish sauce, and sesame oil in a bowl.
- 12. Halve the chili pepper lengthwise, remove the seeds, and rinse it.
- 13. Finely chop the chili pepper.
- 14. Stir the chopped chili pepper and sesame into the dressing.
- 15. Mix the snow pea salad with the dressing.
- 16. Preheat the oven to 220 degrees (convection is not recommended, gas level 3 to 4).
- 17. Place the salmon fillets on a baking sheet.
- 18. Bake the fillets for 10 minutes on the second rack from the bottom.
- 19. Remove the fish fillets from the oven.
- 20. Serve the salmon together with the snow pea salad.
