  1. 1. Squeeze the lime to extract the juice.
  2. 2. Mix the honey, oil, one tablespoon of lime juice, and one tablespoon of soy sauce in a small bowl.
  3. 3. Rinse the salmon fillets and pat them dry with a kitchen towel.
  4. 4. Turn the salmon fillets in the marinade until they are fully coated.
  5. 5. Let the marinated fillets rest for 20 minutes.
  6. 6. Remove the tough ends and strings from the snow peas.
  7. 7. Put the snow peas in boiling salted water for 20 seconds (this is called blanching).
  8. 8. Fill a bowl with ice cubes and cold water.
  9. 9. Drain the snow peas and immediately plunge them into the ice water.
  10. 10. Remove the snow peas and let them drain well.
  11. 11. Mix the remaining soy sauce, one tablespoon of lime juice, fish sauce, and sesame oil in a bowl.
  12. 12. Halve the chili pepper lengthwise, remove the seeds, and rinse it.
  13. 13. Finely chop the chili pepper.
  14. 14. Stir the chopped chili pepper and sesame into the dressing.
  15. 15. Mix the snow pea salad with the dressing.
  16. 16. Preheat the oven to 220 degrees (convection is not recommended, gas level 3 to 4).
  17. 17. Place the salmon fillets on a baking sheet.
  18. 18. Bake the fillets for 10 minutes on the second rack from the bottom.
  19. 19. Remove the fish fillets from the oven.
  20. 20. Serve the salmon together with the snow pea salad.
