🍽️ Fresh Salad with Soy Noodles, Cucumber, and Sesame

Ingredients
- 200 g Soba noodles
- Soy sauce (to taste)
- 4 tbsp Sesame oil
- 40 g Sesame seeds
- 1 Salad cucumber
- 50 ml Rice vinegar
- 0.5 tsp Rice syrup
Instructions
- 1. Bring water to a boil.
- 2. Add the soy noodles and 2 tablespoons of soy sauce to the boiling water.
- 3. Cook the noodles according to package instructions until al dente.
- 4. Drain the noodles and let them drain well.
- 5. Toss the noodles with a little sesame oil.
- 6. Let the noodles cool down to lukewarm.
- 7. Heat a pan without fat.
- 8. Roast the sesame seeds in the hot pan until lightly golden brown.
- 9. Remove the sesame seeds from the pan and let them cool.
- 10. Peel the cucumber.
- 11. Cut off the ends of the cucumber.
- 12. Halve the cucumber lengthwise.
- 13. Slice the cucumber into very thin slices.
- 14. Whisk together vinegar, rice syrup, 3 to 4 tablespoons of water, and the remaining oil.
- 15. Season the sauce with soy sauce.
- 16. Fold the cucumber slices into the noodles.
- 17. Sprinkle the salad with the roasted sesame seeds.
- 18. Divide the salad among 4 small bowls.
