  2. 2. Add the soy noodles and 2 tablespoons of soy sauce to the boiling water.
  3. 3. Cook the noodles according to package instructions until al dente.
  4. 4. Drain the noodles and let them drain well.
  5. 5. Toss the noodles with a little sesame oil.
  6. 6. Let the noodles cool down to lukewarm.
  7. 7. Heat a pan without fat.
  8. 8. Roast the sesame seeds in the hot pan until lightly golden brown.
  9. 9. Remove the sesame seeds from the pan and let them cool.
  10. 10. Peel the cucumber.
  11. 11. Cut off the ends of the cucumber.
  12. 12. Halve the cucumber lengthwise.
  13. 13. Slice the cucumber into very thin slices.
  14. 14. Whisk together vinegar, rice syrup, 3 to 4 tablespoons of water, and the remaining oil.
  15. 15. Season the sauce with soy sauce.
  16. 16. Fold the cucumber slices into the noodles.
  17. 17. Sprinkle the salad with the roasted sesame seeds.
  18. 18. Divide the salad among 4 small bowls.
